I tried this recipe last night. I was not sure what to expect. I have never made a "smash burger" before. I must say that the taste of these burgers was FANTASTIC! I think cooking the burgers and the onions at the same time added an extra element to the taste. Both my wife and daughter were impressed with the results. Thanks for the tip,I forgot I can use my side burner as an extension of my grill,I use a lodge griddle on top of my gas grill to make my Smash burgers,but I can only cook 4 at a time,with the side burner I can make 6 easy for the get togethers,I make the same sauce but with a little A-1 sauce for that extra tang,great video! 👍🏻

The foldaway design means it actually fits in my very small kitchen, but it also makes everything crazy simple to clean. While the instructions say you should not deep fry in this, you can, but do it with your best judgment; in my case the oil didn't even reach the halfway mark.It's hard to see in the pictures, but the skillet itself has a lip in the corner. This allows steam to get out during cooking if the lid is on (so don't try to steam rice in it), and makes pouring out used oil extremely easy.Cleanup was a dream. After detaching the plug and control circuit, the unit is just three separate pieces: The skillet itself, the lid, and the base which may or may not need any cleaning at all (usually just the handles). Compared to a dedicated deep fryer I purchased in the past, where the heating element was suspended in the oil and everything was difficult to clean, the difference was amazing.I'm definitely looking forward to using this for more things in the future.

Looks amazing. I’ve made these but never with the sautéed onion technique! I will have to try that this summer. Also, grilling at the lake can’t be beat. I grill on Lake Michigan a lot. My favorite place to grill

You can use an portable induction cooktop with cast iron and save on the propane. That's what I do. I hold the smash a bit longer for a crispier bottom but your thicker burgers are nice also.

another great video- thank you! i wish my weber gasser had a side burner....but i get similar results with cast iron on the bbq...i just let it heat up for a while with the lid down.
That looks awesome! Kraft Singles are great, that's traditional. But Swiss cheese and pepper jack works really well too.

Awesome job! Love the whole backyard set up. We prefer Kraft Deluxe American cheese for our smashburgers. Any American cheese will do, but their Deluxe is even more creamy and delicious!
The Deluxe is a solid alternative I just can’t get it at the grocery store close to my house. Gotta make a drive out to a Walmart to pick it up
And you don't even have to refrigerate Kraft products...they last forever.

If I'm going American cheese, I definitely agree with the kraft singles. Whatever chemicals they throw in it during processing makes it the perfect meltyness for burgers.

What brand Burger smasher are you using?
Gonna try making this for my husband, maybe with Pepper Jack cheese instead
before placing the buns in the pan on low heat, what did you put in the pan? i see hot oil smoking on the outside of the pan but didnt hear you mention any oil, butter, etc you put in there before toasting the buns. then that oil moived over to provide a better nonstick property for the beef as well
No oil was added. Might have just been some left over from the previous seasoning process.

No oil, there’s enough fat in the Chuck that you don’t need it.
Do you use oil, or something else in the pan before cooking the burgers?

I have trouble cooking my smash burgers I use non stick cook it trough then it's medium rare how to I get well done
do not use non stick, you need to get the pan hot enough that it is too much for a non stick and will destroy the nonstick coating

What did you put in the cast iron after the Buns to cook the burgers with butter or oil ?
Nothing. The fat from the beef chuck renders out so there’s no need for oil or butter.

I find the best cheese for a burger to be cheddar, but it has to be mild. Sharp doesn't melt as good.

Fun fact. I was addicted to smashburgers. I had to make a rule. Only way I would make them is if I make my own buns. They are THAT good.

@@BBQandBottles I use the Joshua Weissman burger buns recipe its a hybrid Brioche/Milk Bun recipe. www.joshuaweissman.com/post/burger-buns I've made it so many times I've memorized it. I also do a smoked porkbelly sandwich with them. I almost like that better than smashburgers

Dont you hurt/scratch the skillet seasoning with that metal scraper? I will use some silicone things in mine, metal on metal is forbidden in my kitchen (except with music :) )
We have a great layer of seasoning that’s built up so it’s fine. If a silicon scraper works for you then go for it!

well, it is almost "sometimes in august", I finally tried this one out :D
I was always against smash burgers, as for me, burger meat must be *THICCCC*... However, this one tastes awesome! Two small changes: I used red onion instead of white, and bbq sauce instead of mayo in the mixture.
Still, the meat is not dry at all (which I feared), and also the caramellization of the meat+onions makes this superb.

I like Cheddar for a flame grilled burger. But for a smash, i like the cheap stuff! extra melty, every time.

The problem that I find with the skillet is after the first burger there is too much grease to get a nice sear for the next burger.

That grinding pink himalayan salt is a silly fad. It isnt from the Himalayan mountains, and the pink is just from a few minerals, that we dont even need, from the rocks the salt deposits are in. Dont fall for it.
