Great video, Hussey! My brother was a chef and told me about slicing up whole pickles for burgers, too! Still do it to this day. The pickles slices aren't overly briny, like they are if you buy sliced pickles in a jar. Good crunch to them that really goes great with the burger.
Finally a worthy smash burger video. Great tip on weight of the burger balls. Sometimes I'll buy the 16 ounce package of 80/20 and I'll break that into 6 balls, about 2.7 ounces each. I do weigh mine so they are all uniform. Martins potato rolls or sometimes a brioche roll on the griddle with a wee bit of butter or mayo and lightly toasted. Very hot griddle is key. And you're correct, things happen fast, so have your buns prepped with your condiments before you get to smashing. We always do two patties per sandwich. Also a good tip using parchment paper when smashing. Kraft Deluxe my go-to as well. Love that you mentioned seeing some holes thru the burger patty after smashing. A great indicator that you smashed them well. My son has serious gluten issues so we use a couple pieces of iceberg lettuce as a wrap. A bit messy but it actually is mighty good. I bought Wagyu ground beef on sale for $6.99! That’s cheaper than most regular ground beef. Keep a lookout for those specials. The mouth feel is phenomenal.

I just picked up a Lodge burger press down at Lanier's in Lexington. Looking forward to our first smash burgers tonight. My Blackstone is the best Christmas gift I've gotten in a long time.
My grandma made smash burgers in the 60s and 70s in a cast iron skillet on top the stove. We did not call them smash-burgers they were just grandmas cheeseburgers , everybody loved them. She passed in 1982 but would be so surprised that they are popular now.
This is going to be my first cook on my new grill. Seasoned it using your video except I gave it 5 seasoning cycles. Can’t wait for tomorrow. Going to add ions and peppers and bacon too.
My kitchen is full of kitchen tools now, I am out of space. So I just use the bottom of a small pot to smash my burgers. Works as good as anything. FWIW.
My father in law gave me his black stone as a house warming gift. So far I’ve done Nathan’s hot dogs. They tasted great on it. I’m going to do smash burgers this sunday

I think you need "burger sauce" that you can make yourself. I would suggest frying up some diced up onions cooked on the flat top as well and add them at the time you add the cheese on top.
I got a new, bigger BS for Christmas and hubby's favorite meal is hamburgers. For his birthday every year he asks for burgers, potato salad and coleslaw. (Think KFC style) I think we will be having a smash burger party for 30. I think I will enlist someone to man the 22" and toast buns. Love warm, toasted buns. BTW, love the mayonnaise - lots of it. :)
Just bought the pro series 4 burner from Walmart for $349 on clearance.. I just made smash burgers two nights ago and MAN!! why I have I been eating thick burgers patties all my life? even putting two smash patties as a double decker, was way better than a thick patty. Also, was curious if it is normal to see a slight bow in the middle of the flat top when on high heat? When I say slight, I mean hardly even noticeable.. but there. goes away when cools down. thanks for the video...subscribed!

I like to put the mushrooms down on a med-heat with no oil at first. Then add some butter and some salt and pepper. A little balsamic vinegar at the end isn't bad either.
Can't go wrong with the smashburger. Always a hit at my house. I like to use a mandolin and get some thin onions on the griddle smashed in the burgers. Top with bacon and use a keto bun,, Son whatcha talking bout Willis?!
Matt... That look on your face after that second bite. You know you don't make that look for most of the foods you do.... There's just something about a good cheeseburger... and I can identify with that look!
you dont need to smash for too long. the key is the temperature of the griddle. you want it to be super hot. blackstone griddles sometimes do not get hot enough.
Do you have an IR temperature reader to know how hot your grill top is? I tried my first smash burger last night and I don't think my griddle was hot enough. It is a Tytus insert for a gas grill so that also may be more difficult to get really smokin hot. I've taken out the grill grate on one side along with the bars that cover the flames, this allowed it to drop down lower and get closer more direct heat for my next attempt. I also used 4oz. of meat so I'll cut that down also.

After his partnership with the BS channel I said to myself "whew, no pit boss non stick here."
The ceramic non stick is what I have switched to from the Blackstone and because now I am not a slave to it. Also, no more rust.
PB griddle is the best way to go so sell that soul baby you want look back

Interesting. Depends on the how high heat and other atmosphere items guess it could. Never had that happen to me.

You’ll start to see the edges getting crispy and the juices come to the top, that’ll be an indication.

To be honest, it’s pretty much done after the flip. Get the cheese on, and about 30 seconds later, it’s good.

You want 450-500 degrees here. So, you’ll be Med-high to high.

Did you flip your dials to high before smashing? Any idea on how hot your surface is?
Surface will be 550° during this. If your disks are at med high, yeah, I will sometimes so that the recovery time isn’t so long.

I'll have to disagree, some time has to be there for the contact patch to really form for that crust. 500-550 is plenty hot
