    Beautiful bacon 😵‍💫yum😵‍💫I’m from Alabama USA and my father was a Perkins. Everyone always talked about the Perkins nose ( not to worry it was a good thing) which was much like your own. I only have been able to trace my Perkins genealogy to a Samuel Perkins in Virginia born in 1760. Who knows we could be distant cousins.🤭

    You can use Polyphenols instead of nitrates and nitrites for cold smoking.

    very nice tutorial on the bacon making process. I am however surprised to see you cooking up the bacon. The stuff I have made has always been cold smoked, so could be interesting to try this style, Can you dry age this type of bacon?

    I don't have a cold smoker, but I found that using smoked salt works well (San Francisco Salt Company). Do you see any issue with doing that, and slicing and freezing raw?

    Nicely done with bacon .. More Bacon to the people :)
    But i'm actually sticking my chin out and say that i would not be afraid of some smaller amount of Nitrate :)
    but its not needed if you do it right :)

    My wife does not like smoked bacon.(A shame I know). Can you use the bacon after the dry cure without smoking.

      Is bacon really bacon if it's not smoked ? hmm i wonder :)
      But to answer your question .. Yes you can
      The difference is that smoked bacon you can eat it directly without cooking it, unsmoked bacon must be cooked before consumption

      yes, you can. And it has a name. Pancetta. As far as I know it's basically just cured and dried pork without smoke

    I wonder if you will ever make the connection between your egg, pork and carotenoid containing vegetables and your health issues fam. I finally did. I feel so much better removing sources of preformed vitamin a and carotenoids from my diet. You all can as well if you visit Dr Garrett Smith you tube channel, the Nutrition Detective. Eating primarily grass fed ruminates has been such a revelation for me
