I've called Nattie Light "The Fisherman's Favorite" since high school when a friend's dad would take us crappie fishing! (Mid eighties) I've grown to like "them fancy beers" as well but been a lifelong Nattie fan.
Those smaller ones are PERFECT eating size for me! I don't keep them over like 15lbs just because I've had some "fishy" tasting ones. Did you ever find out why those cats were so pale? They were almost albinos! Great job Kelly, it's always so much fun getting to "hang out" with you on your adventures! Remember your ABCs! Always Be Casting! (BTW, if you're ever in the mood, fried reds make AWESOME tacos! Use your own or buy your fave cornmeal breading but add cumin to it, and cut the fish in like 2" chunks. Dressing: in food processor or blender add sourcream, lime juice, green chilis, cilantro & a bit of salt. Dress with really thin shredded cabbage, pickled jalapenos if you like a kick, & the sauce!) And in DEFENSE OF THE BIRTHDAY BOY... there ain't NO shame in a fried fish game!! Cheers, and as always, I appreciate the time & effort in making these videos!

We will often soak catfish overnight in 7-UP, it firms the flesh and will give a subtle taste of lemon no matter how you prepare after... grilled, fried, broiled or baked. Never have used pickle juice but going to give it a go.

To answer your question about soggy fried fish. Put the cooked fish on a cooling rack so the bottom stays crispy. Paper towels do soak up the grease but doesn't separate it from the fish.

Use a baking cooling rack to rest the fish after you cook the fillets/nuggets, it allows air to circulate underneath and helps prevent the sogginess from occurring.
Exactly what I was going to suggest. Use that on a cookie sheet lined with paper towels to catch the grease drippings. It’s the best way to keep any fried food crispy on both sides and drains more grease than a paper towel.
