I've been to the Greeley Stampede here in Colorado but I don't recall there being weird food selections. Might have to go again sometime and see. Always enjoy these videos.
One of the favorite videos the Stampede love seeing all the food that you guys try. That blooming onion & crab bao looked the best to me I guess you were to full for a funnel cake lol
I agree the Pickle Corn Dog was not that great! However, at this year's Stampede, I tried the Pickle Pizza, which was soooo delicious! (from a different vendor)

Actually there is a bunch of BBQ places and smoked turkey legs. I went again yesterday and found more stuff.
