An interesting part of Dororo is in how it treats Hyakkimaru as a blank slate, becoming more human as he regains more and more of his body. His travels with Dororo, the fights he has, the people he meets and ultimately how Dororo helps him through it is how he develops his own identity. Hyakkimaru fights to regain his body, but Dororo is the one who makes him become human. The really strong character arc makes both his and Dororo's story stand out among other anime. I think the original story being so old also means Dororo doesn't fall into many of the modern tropes that might make it more predictable or unsatisfying with how you get to the end, simply because it was probably created before any of that was established. Interestingly, Amazon in 2019 licensed a Blade of the Immortal remake, and honestly despite both it and Dororo being 8 or 9 out of 10 anime, I might have even enjoyed it over Dororo purely because of the animation director. It's inferior in sound, animation quality, and story to Dororo; but goddamn the way the director puts together scenes and the way the animation studio was able to circumvent a lack of funding ended up hooking me completely. Another one to add to the list of remakes that push forward the original material into something really cool. Albeit it's much more heavy in tone, somber, and gory than Dororo so it really is not for everyone. (Though if anything, the OP probably slaps more than the Dororo one too!)
This comment perfectly summarizes the entirety of dororo perfectly I agree with your statement of dororo helping him become more human. Even in the show it was hinted multiple times where biwamaru always tells dororo to keep hyakkumru demon side at bay and don’t let that side of him overtake him. I’m glad they went all out on the remake I think it was very much deserved considering who the original source marker was coming from
