Italian White Bean Soup - A Hearty Soup with Good Italian Flavors!

This is a winter favorite around here. The comforting broth develops with the sausage, beans and fresh veggies. The Italian seasonings cook in and it'll make you want seconds! This is a great soup for a cold or snowy day and I serve it with warm homemade flaxseed bread, link here:

The sausage adds flavor through all the ingredients but it's really good as a veggie version too! Just replace the sausage with an extra can of white beans and fry the onion in a little olive oil before adding the rest of your ingredients. You can switch the chicken broth for vegetable broth and the soup is excellent this way too!

I love that it's all done in one pot and the sweet Italian sausage flavor mixes with the rest of the ingredients. 🙂
