My guess with Petey Piranha’s instant KO is that it’s possible to defeat him this way due to being able to obtain a star early in the level within a roulette block and perfectly run towards the boss fight room and jump towards him. Perhaps it was an intentional feature or maybe just a bug the devs forgot to fix? I don’t really know, this is just my theory.
Petey Piranha is almost definitely because that is the only boss level in the game where you can actually get a Star in the level and make it to the boss room before it runs out. They intended for Mario / Luigi to be able to be Star Mario / Star Luigi for this boss fight so they made the star function normally for that boss.
In Super Mario 3D Land, the player can get an Invincibility Leaf after dying five times so being invincible at any point is normal. However, you can't get the Leaf in the special worlds.

With the Bowser Jr fights in New Super Mario Bros DS, you can still fight him even with the star powerup if you also use the fire flower since you can still hit him with the fire.

If I defeat Ball 'N' Chain with a star, its death will be an upside down yellow Bony Beetle in spike formation.
I think that it wasn't intended but I'm not 100% sure. Bowser is programmed to not only damage but also knock Mario away if you touch him, exactly the way a ground pound knocks a player away in this game. I think that Bowser's sprite and a player performing a ground pound are covered with same hitbox. And the reason why Mario doesn't take damage is because he is in his starform and that he programmed to not take damage except if he is crushed.

You could one hit kill Boom Boom with a star man in fortress 1 in Iced Land in Super Mario Bros. 3. That is literally one of two fortresses in the entire game that had a star man in it.
Mario being invisible in SML is due to the animation freeze after completing the level, not necessarily a glitch. Similar to how the color cycle on NSMB and SMB freeze at whatever pattern is active after defeating the boss/touching the axe.
That's due to the NES sound chip only being able to play a few synthwaves at once When some sounds play, it uses the same synth, so that part of a song sometimes gets cut off while the sound effect is playing
What’s interesting to me is that in the original Super Mario Bros., the sprite shown when defeating Bowser was Bowser’s actually sprite. For anyone unfamiliar, if you beat Bowser in worlds 1-7 with a fire flower, an enemy’s sprite will normally be displayed instead of Bowser’s, indicating that it’s a fake. Whether this not occurring here is due to the nature of how Mario was given star power or if Bowser was only programmed to display an enemy sprite if he was defeated _specifically_ with the fire flower, I’m not sure.
Mario in Super mario land disappears and appears when using the star. Mario wouldn't become invisible, you just stepped on the switch at the wrong time.
There is a boom boom fight in SMB3 where you can arrive with a star and touch him before it runs out. The orb will be upside down but still function as normal.
I remember using cheats in New Super Mario Bros to be invincible and have moon jump and used it against the last Bowser fight, and he just bumps you back if you run into him.
The SMW one is interesting because they specifically used a Game Genie code and that code is known to have graphical glitches even outside the Koopaling fights. It also behaves a bit differently than real stars in other ways. I'm curious if they used a cheat to get a star to appear and use that to see what happens in SMW.
I wonder if using the star would count as if you're using the super leaf, meaning you couldn't get the sparkling 5 stars for your profile. For those not in the know, if at any point the super leaf shows up in any level you can't get the perfect clear file. Only way to get a perfect clear file is by never having the super leaf show up meaning the ? Block at the beginning of the level. You can actually bypass this by closing the game without saving if you accidentally get the super leaf ? Block.
The biggest surprise to me was SMB3. Bowser already has an alternate death from getting killed by fireballs or hammers that works fine. It's weird that killing him with a star softlocks. Any chance the game behaves differently if you don't juggle him?

For 3d land, you have the invincibility leaf, so the bosses are programmed to not react when you're invincible.
