The tagine is conical shaped for a purpose and has a hole in the top for additional water. Once its cooking you don't mess around stirring it. It is an artistic presentation when finished. One eats first with the vision second with the aroma and lastly with the wonderful taste. I hope that answers your query.

Rinsing chicken is a terrible idea. Heat kills bacteria. Rinsing chicken just sprays raw chicken water around your sink and kitchen. Far worse.
