      Yay!! I’m so glad you’re finding it helpful. So funny story, along time ago, I decided that if I had to pay for lifs, then I was going to put everything in quart jars. Because a quart jar cost about the same as a pint jar and I only have to use one lid rather than two jars and two lids. Makes sense, right? OK well then I forgot this whole idea that there’s only two of us eating. So, when we open a quart of salsa, we pretty much have to eat salsa on everything for a week to use it all up. Ha! So now, even though I have lots jars, I have to prioritize what goes in the pint jars because I have much fewer of them than I have quart jars. 😊

    Whatever kind of greens are SOOO good with pepper vinegar on it! I'm trying to find the right peppers to make my own, but my dad loved the stuff! They are usually really small (birds eye maybe?) In plain white vinegar. My understanding is that after the bottle is empty except for the peppers, you can just keep adding vinegar to it, while you use another bottle.
    I can a lot of milk now. I never did it in the past. Really handy to have on the shelf! Its so good!

    I haven't yet canned greens. Ive frozen them and dehydrated them. Dehydrating them is great, because they shrink up so much, and it's shelf stable. I add them as you do, ti just about everything you can. LOL
    I'm not fond of the texture of canned greens, so if i use them, i tend to mux them with other things. One of my favorite ways i used them up when i had a bunch was to cook up some pasta and white beans and mix tgat witg tgw grrens in olive oil and garlic. If you like cheese, some parmesan on top would be nice. Guess i might have to make that for dinner tonight 😊

    • @FlatTireFarmHomesteadingAlaska
      @FlatTireFarmHomesteadingAlaska  Год назад +1

      Ha! Dinner sounds great! I agree that dehydrating them would be much better way to preserve them. But living with off grid power canning is much more energy efficient. I do have a 10 tray dehydrator, but the amount of greens I can actually get into that dehydrator is very small compared to the 24 hours of power it uses. My dehydrator uses about as much power as two refrigerators running constantly. I do dehydrate some things, but I’m really picky and choosy on what I dehydrate. And since the sun is starting to wane, it’s definitely not the time to use it extensively. i’m hoping to dehydrate some of my oregano though. I might just put that on the tray and let that air out. Happy Wednesday friend.
