    Then I saw they added feta cheese, and it all made sense

    how many cans of corn did you use?

      I use 5 cups of frozen corn, which is equal to around 2 1/2 cans of corn. Depending on the size of the can of course.

      The Mexican street corn casserole can be stored in the fridge for 3-4 days. To make the recipe ahead of time, mix the ingredients and place them in the greased casserole dish. Cover and refrigerate until ready to serve. Then bake right before serving.
