The Ultimate Smoked Street Corn Dip Recipe!

  • This may just be one of the best dips that I've EVER HAD! This Mexican Street Corn Dip is absolutely incredible! I've made it several times now for guests and parties and THEY GO WILD!!!! Come see what it's all about!

    Now when it comes to parties, smoked appetizers are the way to go! Ask my friends and neighbors.... they'll tell you! So when I saw this smoked dip i said "I love me some smoked queso, but I think this will be way beyond that"... and of course I was right! Now this isn't exactly Elote, or Mexican Street Corn on the Cob... but its pretty amazing!
    Here's what you need for this street corn dip recipe:
    - 2 cans of Fire Roasted Sweet Corn
    - Two 8oz packages of cream cheese
    - 8oz Pepper-jack Cheese
    - 6oz Cotija cheese
    - 1 cup chopped fresh cilantro
    - 1 cup sour cream
    - 2 cloves garlic
    - Tajin seasoning
    ** Bonus Ingredient (not used in this video but used since...) **
    - 8oz shredded taco cheese
    Place all of that all pretty into a greased aluminum 9x13in pan and place into the smoker. Stir occasionally until all the cheese is melted and you have a nice warm CREAMY consistency!
    Now I don't know about you.... that's one tasty smoked bbq appetizer or pellet grill Mexican Street Corn dip!

    I found, if you add the cream cheese on top, it gets smoked nicely, before you mix it up. Just a little added smokeyness.

    Smoking some now, I used fresh roasted corn and added 5 jalapeños. First stir and I licked the spoon!!!!! Oh my yummylious.

    I've definitely got to try this recipe. I may even garnish a
    little bit of it with green onion to see what version we like more. I know you said this is a dip but I see this as possibly a spoonful being put onto a street taco like tzatziki sauce on a gyro. To give the taco a new unique twist of flavor.

    Wow I really like that recipe it looks simple and easy to do and not a lot of cleanup and I like the idea I don't get my hands messy LOL dude you knock this one out of the ballpark. I'm heading to the grocery store right now to get all these ingredients I'm making this tomorrow along with a roasted spatchcock chicken on the grill.

    Using the smoked canned corn in this is a great idea. I was expecting you to grill ears of corn, and this is so much easier😊

      I will say that getting fresh corn off the cob for this recipe may be a Baller move… I may have to try it next time. But this dip is incredible!

    I’m not a huge dairy/cream cheese fan so I may only do half a block or one block of cream cheese with this and add some more corn. Otherwise looks delish! 🌽 I’ll also be throwing in some Trader Joe’s everything but the elote seasoning and jalapeño!

    Gonna try this recipe as the wifey lives street corn dip. Won't use those Briquettes though. I've heard from fellow smokers that there's some stuff in them that can ruin flavors and seasoning since it's unmeasurable.

    Hey man that looks super good. I do have a couple of questions though if you don’t mind.
    1. I’m a little confused about the cheese you used. You say Cotija but it looks like grated cheese. The Cotija that I am aware of is more of a very crumbly cheese that I don’t think you can grate like that.
    2. I noticed in your comments you said that you now use taco cheese. Do you just mean like a Mexican cheese blend? And you are adding that in addition to all of this? Does that really make a difference and kind of change the appearance of the whole recipe? I was thinking maybe it needed a little spice like some jalapeños or something. What do you think? Is it already a little spicy?

      I broke the cotija down more, but yes its typically crumbly. It was a taco bled cheese, but I'd assume its the same or close to mexican blend. Adding a little spice would be nice! I can't though because my wife can't eat spicy.
