    Thank you for watching, I hope you enjoy this simple and easy recipe.
    Coctel de Elote recipe:
    Ingredients:
    Fresh Corn
    Cotija cheese
    Mayonnaise
    Mexican hot sauce of your choice
    Tajin or chili seasoning of your choice
    Cooking Instructions:
    Boil the corn for 8 minutes or grill for 4 minutes per side flipping every minute to prevent burning.
    Slather the corn with mayonnaise on all sides.
    Over a plate of cotija cheese spoon the cheese over the corn.
    Sprinkle the chili seasoning over the corn
    and finish off by drizzling hot sauce all over the corn.
    Or you can cut the kernels off the corn.
    Place all of the ingredients in a bowl, mix well.
    Serve in a cup.
    Enjoy!

    Grew up in Dallas around Mexican culture and this is my favorite snack still and I'm 47 African American. I learned to cook a lot of Mexican dishes and I moved to rural area to buy my home. My neighbors are Mexican. We are like one big family. They love my food. They tell me it taste authentic and they are teaching me even more recipes. I love Mexican people and their culture they are very family oriented and just very loving people. Tfs

    Kirby, your channel magically popped up today courtesy of RUclips. What a great find. I watched your cheesy scalloped potato casserole video first, then spotted this one. I LOVE Mexican food & that Coctel de Elote looks yummy. What I'm also looking for is an elote casserole to serve as a side dish the way Lawry's restaurant serves creamed corn with prime rib. Can you whip up something like that?

    I would have used roasted corn. Adds more flavor. None the less, this still looks super delicious. Thanks for sharing 😏👍

      Traditionally and authentically it is cooked in butter and epazote in water. For this particular presentation it is never roasted. Never.

      @@germanlara-hb4ee In Mexico the street vendors mostly serve this with corn still on the cob. Roasted 100% of the time.
      There’s about 10 different “correct” ways to make this dish. And they are all delicious. To each his own

    Would this work as a topping on navaho fry bread, with say mince or beans and some other salad?

      I put it in mashed potatoes or add lobster and crab. It goes with anything and is so yummy.

    Looks great. Is it meant to be served cold? Is it ever served warm? I've seen it with chopped brisket on top. So cold with warm brisket on top? Thanks.

      It can be served hot or cold, that really depends on the street vendor you find. Some elote vendors just have a basket with the corn in a bucket attached to a bicycle and others that have carts with propane burners cooking the corn in a pot.

    Sorry Kirby, but in Mexico they use cream ( you can find that in the Mexican markets sometimes in regular stores in the international section. There is a big difference.

      Hi Edna, some vendors use Mayo, that depends what they can afford. Mayo diluted in lime juice also.

    My daughter from TX keeps telling me to find the Mexican street corn dip at the grocery, I am not finding it.
    Then on YT it’s hard to know which is authentic, because I’m authentic. Some use cream cheese, some don’t.

      When it comes to authenticity, the only thing I added that you wouldn't see at a street vendor in Mexicali is cilantro and tajin. They use a chili powder but it's a Mexican brand from over the border. The butter might be another ingredient the vendors might not have, but some do. I live 20 mins from Mexicali, BC Mx. The main ingredient to street corn are Mayo, cotija cheese, and chile armor. Depending how the vendors budget, you will get different condiments. Of course that's what I see by California, that may differ in different regions of Mexico. I hope this helps.

      I live 20 minutes from Mexicali, BC, MX, ive seen vendors in Tijuana sell them like this also. Farthest I have gone along the Mexican border is San Luis. I am not sure how other regions serve elote.

    YES! In my younger days My friends and I would Fly from Miami to go in party in San Diego. My friends and I would frequently take trips over the border to Tijuana. They would go to get drunk but I would go to get fat. 10 or 15 years ago if you were to try and describe Mexican street Cor no to anyone East of Texas texas you would be served with looks of confusion and Disgust. Many's and cheese with corn??? A couple I was going to fall out of the booth at chili's when I saw they had Mexican street corn on the menu.. Not only did I force everyone at the table to order I also made them sit through the stories of me sucking down large quantities of it well my friends were Making asses out of themselves at 1 of the Tijuana tit*y bars. I could drink warm tequila and look at dancing hookers in Miami but I CAN'T Get good Mexican food here. I've had very similar versions to this one before but my favorite version had black beans added to it which may B weird 2 some but as a Cuban I saw it added an elegant touch🤣. Another awesome idea Kirby keep them coming!✌🌴

      Im definitely passed that life style, I wouldn't hang with the best of them on a good day. If your ever in the San Diego area again, reach out to me. I know some great spots in Mexicali, Baja California. I suggest coming in the winter, our springs and summers are brutal. LOL

My one friend used to brag that he was every father's nightmand believe me bro he was but we used to tease him and tell him someday karma was gonna bite him and HOLY 🤬 It did. Only 2 years I've after he married the girl that tamed and "cheeko-broke" him She gave if birth too beautiful beautiful triplet little girls Who are now 14 and have him wrapped around they're fingers and the other friend who was the real party animal And was the stereotypical Miami street "ricer" racer Who never knew a car he couldn't Hot wire in under 20 seconds And whose shop just got a 4 year contrack with the city of Pembroke Pines to do the security wiring in their cruisers and in the only Ricer He owns is his wife's new Odyssey🤣. Bro I may have been the boring boring designated driver but but slow and steady always wins the race lol. I walked past the drugs and booths to get to the street tacos and I drove a camera then and I drive a camera now 😎✌

    you cant add cilantro for color its to strong of a flavor so itvwont be just for color if you color and just color you at flat parsley very mild non evasive taste

      As a Mexican, I have cilantro on almost everything I eat. It's your groceries, make it how you want it. Don't tell people what not to eat because it's not your preference.

      In the States you may knock the canned corn. But over the border, those ladies on the carts are pouring several gallon cans in a big pot. I'm trying to keep it how I see. Just saying....
