I made this recipe today… I used frozen super sweet corn. I steamed the corn just enough so it wasn’t frozen anymore and a little warm. I followed the recipe with the exception of I used Mexican crema instead of the sour cream and mayonnaise. I have been craving Elote for weeks now and I have to tell you, this totally and completely satisfied my craving and now I can eat it for a couple of days. This was fantastic!!!
Great recipe for esquites! Much better than some better-known chefs on RUclips! We choose to grill our corn, along with either serrano or jalapeno chiles, we believe the charcoal imparts mucho sabor, as well as the chiles too. Gracias amiga.

Tried this for the first time yesterday for a group of 6 at my BBQ (pork belly burnt ends). I was able to find all ingredients and just doubled your recipe. Everyone liked them. Will definitely be doing this again when fresh corn is in season! Thanks!
Looks good. I like to roast the corn with it's husk still on but soaked in water for about fifteen to twenty minutes so it doesn't dry up while cooking. If you don't have a grill you can roast the corn in the oven. Thanks for sharing.

Linda Liddell we don't have Mexican markets here in the small northern Saskatchewan town where I live. No such thing in our grocery stores either. I suppose I can order it on Amazon but it's so much cheaper in Mexico!

Theres a trick to corn I seen on another channel, she took the whole corn with leaves, popped in the microwave for two minutes, took it out cut the end off, pushed it out and even the stringy stuff came off.
Looks wonderful except for the cilantro.... can't stand it! LOL I have seen this with grilled bacon and caramelized onions, and peppers... which looks even better!! Still, looks great the way she makes it!
LOL, Tajín is not "traditional" given that it is a relatively new product in the market. What's traditional is spicy chili powder (chile de árbol in powder form), lemon and salt. This way you don't get all the toxic chemicals that go into making Tajín.

I added cooked pasta and mixed it in, made a cold salad. To use up the leftover.

2-3 cans of drained corn should do the trick.
Try cutting the corn in a Bundt pan. Stick the small top end of the corn in the hole and the kernels fall into the pan.
