Tips I learned in Mexico for making authentic Elote “Esquites” Southern Mexico- style
1) Use white corn not sweet corn
2) add salt to boiling water and cook White Corn, removing it from the cob afterwards
2) mayonnaise and Nestle brand Media Crema works better for esquites

I don’t know who YOUR idea of ‘we’ is, but millions of us around the world will put garlic in most things we cook (sweet goods the exception), including elote. People be flexible or not.

Lamo WE and most other Mexicans don't use cilantro in it nor garlic some do for this snack but it would not be considered the same snck .

Here’s a little tip: You can actually get that nice charred corn look and flavor from literally just putting your corn on your stovetop. Even a glass stovetop will work. Just obviously be very careful with the heat settings, since the kernels can pop juices! Then I’d follow the rest of this video - but that charred flavor is super important, imo!!!

There is nothing better than sweetheat . I have to add small diced hot Peppers, Red Onion, sweet peppers cooked separately to mix with 🔥 roasted 🌽 with cheese choice maybe dash of mayo not much. And as far as Crema goes just use a little heavy cream and a squeeze of lime.

All of you complainers can make your OWN videos how YOU think this should be made. ALL the stands in ‘my’ area let the customer CHOOSE what they want to add to the corn. There are many & varied ingredients for the customer’s taste choice. There is no one single ‘right’ way.

This isn’t the Mexican style. It’s the American style. They are not the same thing they are made differently. You add to much stuff why cilantro? This isn’t pico de gallo. You are supposed to boil corn for like 45 min then when you take it out you can put mayo,mozzarella cheese, and NOT Tajín but red powder they are not the same Tajín makes the corn sour.
Example, I make tamales, tamales, tamales. I am 74 years old. Over all these years without exception, although the ingredients are basically the same, every single person I have ever met that makes tamales has their own ‘personal special touch’. It doesn’t make the product ‘less Mexican’ just because there are differences in personal preferences or touch. SAME THING WITH ELOTE. There is no ‘set’ Mexican way among my acquaintances. I have two relatives that loooove habaneros. They want that thrown in to their corn mixture. Yikes! In my area, the stands offer many choices of what to mix in and how much, many corn method & types utilized according to the stand.
