This is my first comment honestly, I feel a bit nervous (as English isn't my first language). I just made pesto today using your recipe, put it in pasta, it's very delicious, thank you so much Laura!!! I can't find any pine nuts at nearby supermarket, so I just use almond instead, next time I'll try different kinds of nuts. And I just substitute lemon with lime instead as I already have it on hand, so I just use its peel and juice. (Quite a bit rebellious, I think :D) I'm Thai, and I don't fond of foreign food that much, but I like this very much, maybe because I'm a basil-lover. Anyway, thank you again, you are amazing!
+Wiyaphat Wongsaeng Pine nuts are the most expensive nuts, more than macadamias. They are like $20/lb. Try a specialty store, Italian store, or Whole Foods.

Daniel Costa , it could cost a lot because of how much basil you would need to make a decent amount. Growing basil isn’t terribly difficult though, and neither is growing lemons. Parm and good olive oil are expensive, and pine nuts can be somewhat pricey. They sell it in big big jugs at Costco with no pine nuts, and it’s honestly delicious. That’s an inexpensive way to always have tons of pesto-and you can freeze it.

Laura, I made this pesto a few days ago from home grown basil and even with parmigiana cheese (I finally had to go look for some since you talk about your favorite cheese in most of your cooking videos ;). It was delicious! I had it on plain toasts... even tried your baked pesto chicken recipe... both were wonderful! I'm going to try grilling shrimp marinated with pesto next. Thanks for sharing. I can't wait til the basil grow so I can make more.

Great video. Searching the definition of pesto what she is making here has it all in there. She added some lemon and salt and pepper to taste. I am sure there are variations from different regions of Italy but she has the basics in there and I think I would like the lemons added to the mix. Thanks again Laura your video's are great. :)
There are different versions - my region (Puglia) doesn't typically put garlic. The argument some Italian people (from Genova) are making here is that Laura said that hers is a classic Genovese recipe and it totally isn't. I actually don't know if there is any region in Italy that puts lemon and pepper in their pesto - I never heard of it and in my region they don't, just like they clearly don't in Genova.

Yes, they are also very expensive and difficult to find in my country. She showed the classic pesto recipe, but I've succesfully made it with almonds with or without pistachios, also using a hint of nuts, cashew and pecans. It's not the same flavour, but you can experiment. I have my own "distorted" recipe to a very naughty pesto, that magically gets devoured everywhere I bring it. Just add the cheese at the end.

I'm Italian from Genoa where the pesto come from,and your recipe needs to be updated,first there's no lemon juice or vinegar in real pesto,because it will kill the flavor of the basil, I know that commercially in jars ready made pesto they adds vinegar for preservation purposes but it is totally wrong because will be no longer taste like the real flavor that pesto should be. .

No way!! I'm from Genova and there is ABSOLUTELY NOT lemon juice and pepper in pesto!! Pine nut don't have to be toasted, and you have to choose the most tiny basilico leafs
+Alan s. Hiwa lemon juice's acidity litterally kills the basilico's delicate flavour. Pesto is the most famous recipe of my city, and no one better than me can explain you how the original recipe is. Of course I'm not a closed mind so you can try your own versione of pesto with lemon juice or other ingredients, but then don't call it "pesto". It's like if you put chocolate in a hamburger

what's the recipe? cashews are a lot more affordable than pine nuts
What's the ratio or measurement? I wonder if cashew is more nutty than earthy so it needs to be reduced compared to pine nuts

I like the addition of lemon but I always use half reggiano, half pecorino romano. The pecorino lifts everything and adds depth of flavour.
