  • Today Raymund shows me how make Linuyang. We only use three ingredients. Banana, Coconut and brown sugar. We smash the bananas using guava tree limbs in a bowl made from 70 year old stone bowl and we scrape out the coconut meat using an old Filipine tool.

I noticed you watch your Filipino hosts make food and excitedly offer you what limited resource they have. Seeing how they make do inspite of very limited resources, i do not want to get ahead of you but even among urban Filipinos who visit those places and who are treated well and fed, we usually leave something for them knowing that including guests in that limited resource further stretches that limited resource with each getting lesser portions. I hope you get what i mean. Just do not be too generous (generous from their perspective) as they will also rely on you should things get tighter. Balance. Just a message of concern and advice as you are a stranger to that place. Even Filipinos not from the area who visit such places practice that.

Dustin, this is really such a great video. I had a house in the Visayas, and tried Tuba. It is really good, especially when fresh!
Tuba is nothing more than the fermentation of the sap taken from coconut tree or other types of palm trees. In the Philippines, the Tuba which is consumed is mainly from the sap of coconut palm and that’s why they call it coconut wine. It is just so cool how it is naturally fermented in the plant from the sun. Anyway... You can google it.. lots of info on it. Sometimes it is orange in color. Hey, I live in Luzon. San Juan, La Union. if you are ever up in Luzon, feel free to drop by! After covid 19 that is. I'll take you out for a surf. I have an extra board! Keep up the great videos... You show the TRUE Philippine spirit in your videos. You capture the natural beauty of the land and people. This country is more than just El Nido and Boracay! Its so refreshing to see the real Philippine culture being captured. I do a bit of gardening here.. and i put up some videos.. I just do it for fun. chek them out if you have load and time! ruclips.net/video/dOGWbne1Xaw/видео.html Mabuhay! Mark in San Juan!

That milky white drink you had is not yet called 'tuba' because it has not fermented yet. It's fresh coconut juice from coconut flower buds that's why it tastes very sweet. The liquid contained inside the coconut fruit (which most vendors falsely called coconut juice) is actually called coconut water. The juice starts to ferment only after about 2-3 hours and the taste changes from sweet to something you haven't tried before and it becomes 'tuba' or toddy. Most toddy gatherers add a ground bark of a mangrove species locally called 'tungog' to add color (a range of hues between bright mustard yellow to orange red) to the drink to make it more visually appealing to consumers.
