When I went to Benihana for the first time, all the chef did was a beating heart. The food was alright, but over rated because I can pay 10% the price in Chinatown for fried rice.

***** No, it's actually supposed to be spelled Filipino. That's the correct spelling. You don't spell Tomato as tomatto just as you dont spell Filipino as Philippino. No offense Kjetil, just trying to correct Joe here.
I've eaten at a Benihana like 20 times in my life and it was always a great experience. Wish we had one here in Italy. Excellent food and super entertaining. And you get to meet other people at the table.
This Chef's performance was an impressive display. People at other tables were definitely envious of the ones sitting at this table, having a great time with the Chef. I could be wrong but from what I saw in the background, none of the other Chefs were as interactive with their guests as this one. No doubt the onlookers couldn't help but glare at these more fortunate guests and think "Those lucky sons of bitches...", lol.
That guy deserves something from Benihana. He could of easily done his job and cook quietly, but instead he made the family experience that no cooker could of done. Cheers to that Chef!

I saw one of these chefs before in Houston as a kid and to this day it is so impressive how talented these chefs can be to entertain while feeding a freaking 8 top. Awesome.
I love this guy. What I was thinking while watching his "show," was why doesn't everyone bring this fun and craziness to their work. I would imagine he makes a lot more in tips than many other hibachi chefs! If you're going to work any way, why not act nutty, make people laugh, and serve up some yummy food? Heck, you're going to be here, so turn your time into happiness and more money? Great guy and I would imagine he could get anyone to laugh!!
I can try and answer this as best I can however it is very location specific and it is based on my experience working at another similar chain. In some locations the tip pool is a set amount for a table aside from cash tips and this system does not reward the people who go the extra mile to entertain guests. Doing a show of this sort also requires extra setup for each of these tricks which takes time and depends on other things such as how busy the restaurant is as you do not want customers waiting too long. The last thing is sort of dealing with liability. I feel like the point in the show where he brings up the guest and has him help cook and try and do the egg trick is something I've only seen the restaurant owner and `Vegas Chefs` 20+ years do. The last thing is doing a show of this sort depends heavily on the attitude of the table so a word of advice if you hype your chef up you will likely get a better show.
