I have switched to a low carb lifestyle and it helps me a lot with portion control whenever I feel like a little treat. I have made this recipe a few times and besides vanilla I added different flavours to the filling, such as orange, banana, lemon, rum and almond extract. I have also added cinnamon to the crust. I made these last night AND your full-sized cheesecake but used the cheesecake filling from the large one to fill the minis since it's so much filling to begin with. I added a rhine of a lemon and juice of 2 lemons to give it the cheesecake tartness and then I cooked a berry blend on the stove with a little but of powdered sweetener and swirled it in. Came out AMAZING! So excited to share with my family today
I made these last week for a Women's Ministry Spring Tea. I DID NOT spray the paper cups w/cooking spray. They turned out fabulous and were so delicious. Every woman at my table loved them. My husband has asked me to make a double batch "for the house". Now that's praise, indeed.
Made these today. They are so good!! I baked the crust for 5 minutes like the comment from Selma suggested. The crust was amazing! I also made a strawberry compote with the granulated swerve and some lemon juice. So good on top of the cheesecake. This is definitely one of my favorite keto treats! 😋
I just made these they were so yummy. The only thing I did differently is I put the base in the oven for 5 minutes, then poured the batter onto the cool base. Makes a much crunchier base and it cooks lovely. Thank you for this awesome recipe Jennifer
I didn’t make the almond flour crust. Just put the cheese batter in the cups and baked. Didn’t have sour cream so I used greek yogurt instead. So good!

i just tried this recipe it's so simple and yummy. and keeps well in the fridge. i added lemon rinds to the filling and for topping i piped some whipped cream and drizzled with keto salted caramel sauce for an additional 1g carb per serving. thanks for the recipe 😋😋

If you dont want too much crust i would cut the 2/4 (almond flour) from the crust ingredients. and double the cheesecake batter. You can turn this into a fatbomb treat if you use ghee for the crust and make the crust thinner. Then add mct oil to the batter.
These are really good, but flat as a pancake. I would make at least twice as much of the cream cheese filling. Maybe 3 times. They were about 1/4" tall.
I’ve made your cheesecake twice now but my crust is always soft and didn’t come out with the cake! First time I didn’t bake it and just refrigerated it so second time I baked it but still wasn’t firm. Not sure what I’m doing wrong. Didn’t taste that great and I love graham cracker crust! 😔
You can use regular sweetner but may come out a little grainy but I couldn't tell the difference using it. Or blend your granulated sweetner into powder sweetner.

I made it with no crust at all. Cook in microwave in microwave safe cups for about 30 sec. Perfect

Actually I answered my own question and found powdered erythritol at Walmart!
