Keto mini cheesecake bites are easy to make and perfect to have on hand for whenever you want a sweet treat. They are just like my super popular mile high keto cheesecake, only bite sized!

INGREDIENTS
1 1/4 Cup Almond flour (My favorite brand on Amazon amzn.to/2Nw5aDK (affiliate link)
3 Tablespoons Granular Sweetener (My favorite brand on Amazon amzn.to/2D8OmNj (affiliate link)
5 Tablespoons Butter, melted
8 ounces Cream Cheese, room temperature
1 Large Egg, room temperature
1/4 Cup Powdered Sweetener (My favorite brand on Amazon amzn.to/2Dm9xM9 (affiliate link)
1/4 Cup Sour Cream, room temperature
1 teaspoon Vanilla extract
INSTRUCTIONS
Preheat the oven to 350F and line a 12 cup muffin tin with liners
Crust:
Mix together the almond flour, granular sweetener, and butter. Spoon the mixture evenly in the muffin cups and press in with your fingers.
Filling:
Combine the cream cheese, egg, powdered sweetener, sour cream, and vanilla extract with a hand mixer until smooth. Spoon the mixture evenly into the muffin cups. About 2 tablespoons for each cup.
Bake in the preheated oven for 20 minutes. Remove from the oven and let cool completely. Chill in the refrigerator for at least 3 hours to firm up. Serve.

Hi Jennifer, I don’t know if you’re going to see this comment but I want to thank you for this recipe 🙏it is my favourite. I have switched to a low carb lifestyle and it helps me a lot with portion control whenever I feel like a little treat. I have made this recipe a few times and besides vanilla I added different flavours to the filling, such as orange, banana, lemon, rum and almond extract. I have also added cinnamon to the crust. I made these last week for a Women's Ministry Spring Tea. I DID NOT spray the paper cups w/cooking spray. They turned out fabulous and were so delicious. Every woman at my table loved them. My husband has asked me to make a double batch "for the house". Now that's praise, indeed.
I made these last night AND your full-sized cheesecake but used the cheesecake filling from the large one to fill the minis since it's so much filling to begin with. I added a rhine of a lemon and juice of 2 lemons to give it the cheesecake tartness and then I cooked a berry blend on the stove with a little but of powdered sweetener and swirled it in. Came out AMAZING! So excited to share with my family today

I didn’t make the almond flour crust. Just put the cheese batter in the cups and baked. Didn’t have sour cream so I used greek yogurt instead. So good!

Made these today. They are so good!! I baked the crust for 5 minutes like the comment from Selma suggested. The crust was amazing! I also made a strawberry compote with the granulated swerve and some lemon juice. So good on top of the cheesecake. This is definitely one of my favorite keto treats! 😋

i just tried this recipe it's so simple and yummy. and keeps well in the fridge. i added lemon rinds to the filling and for topping i piped some whipped cream and drizzled with keto salted caramel sauce for an additional 1g carb per serving. thanks for the recipe 😋😋

OMG, I don't really leave comment on recipe channel and I made this yesterday and having this for morning dessert, this is the easiest and the most tasty keto dessert I have ever made. I think the biggest trick was working the ingredient as room temperature and give enough time to mixing all the ingredient. Sooo good. Not too sweet and crust is just like blessing! I just made these they were so yummy. The only thing I did differently is I put the base in the oven for 5 minutes, then poured the batter onto the cool base. Makes a much crunchier base and it cooks lovely. Thank you for this awesome recipe Jennifer

I used liquid creme cheese that comes in a bottle and it was better than the solid one
The third time my mum amde it she substituted Sour cream for sorry heavy cream and its turned out even better and sweeter

It’s very similar to my keto cheesecake, but I make mine no-bake so minus the egg. So delicious! I add either strawberry compote (Allulose sweetener with some Xanthan gum or a keto ganache). Keto isn’t punishment!

Oh dear recipes calls for 1/4 cup sour cream.
You don’t have to use your fingers to press it to the bottom just use a small glass cup & mash it down

What powdered sweetener should I use?
If you dont want too much crust i would cut the 2/4 (almond flour) from the crust ingredients. and double the cheesecake batter. You can turn this into a fatbomb treat if you use ghee for the crust and make the crust thinner. Then add mct oil to the batter.
I made it with no crust at all. Cook in microwave in microwave safe cups for about 30 sec. Perfect
Would this fit in a 4 inch or 7 inch spring form pan?
