I use Shotcut too, I need to convert 4K60FPS H.264 100M files to HVEC, and also correct colors. As I am using laptop, and this laptop has 4K screen - always remember to:
a) disconnect additional monitors
b) have parallel processing on
c) use NV codecs when possible
d) put source and target onto RAM disk (x10 improvement over SSD ... I do have 64GB RAM)
e) use performance mode, and lay your laptop on laptop cooler
This will improve conversion times, but still far, far away from desktop experience, not mentioning server. I will upgrade to Threadripper due to fact that this 5 min clips are 5GB in size, and whole 2h is near 80GB of data, that I need to re-assemble in one piece, one day, and cut/slice edit, plus color-correct. It is impossible with any mobile WS.
Shotcut 20.06.28 now supports Proxy Editing

Convert to edit friendly and proxies (just added in the last Shotcut update) both address being able to read/decode video easier and faster. They do not address lags that happen after adding filters. Convert to edit friendly is especially used when the original file is variable frame rate which makes the video not reliable for editing. Some people also use convert to edit friendly if they want to work with video files that are as fast as proxies but keep the original video quality intact and to have that the files are big in size. They are big files sizes because those are lossless video files which means the original video quality is exactly the same while at the same time play much smoother than the original video files. If people have enough space for big files then convert to edit friendly will suit them well. Convert to edit friendly files are meant to completely replace the original file for editing and encoding/export. Convert to edit friendly is Shotcut's version of "intermediate editing".
Unlike intermediate editing, proxy editing only replaces the video files for editing. Proxies do not replace the original files when encoding/exporting. But like I said before proxies like intermediate editing does not remedy lag after adding effects. And that's where the preview scaling comes in as you showed in the video.
If you are playing back a video just fine but only experience lag when using effects then you only need to use preview scaling. But if your file is difficult and slow to play and edit without filters added then to get the smoothest playback experience use convert to edit friendly or proxy editing along with preview scaling.

Wait if you put the playback quality thing to 360p when you export will it be 360p or still be the quality you choosed just the playback is 360p (basically what Im asking is if I do everything you said in this video will it still export in 1080p?)
It will export using your original video files and it also depends on your final export resolution.
You do have to change it in the advanced section of the export tab. I was going to do this, but it was already preset to 360p.

I think it really depends on hardware mostly and also the types of project you're trying to create. IN my experience, at least for the open source video editors I use, they have been fairly stable including Shotcut.

You might want to try using Shotcut Proxy Clips. I have a video below on that and if it still doesn't work, then it might be hardware issue.
