Ilonggo is more than a dialect of something else, it is a language in its own right, also called Hiligaynon. The Philippines has about 180 distinct languages, many of the larger ones also have multiple dialects. Ilonggo's main dialect has a very singsong intonation, but the dialect of Southern Mindanao has a more typical flatter intonation.

Basically exotic Filipino food is made of " parts not eaten by the colonizers " . And we , they rather (our ancestors 😸) made do of what they had. And now we are enjoying it. E.g. is dinuguan, bopis, kare- kare and many more 🤣👍😸 enjoy your stay and have fun 👍😸

Sisig is made of pig's cheeks and ears. But these are boiled well before chopping in small pieces then cooked again with oil, onions, spices, and one egg added on top and using lemon to sprinkle before eating.
