- Baisakhi/Vaisakhi is round the corner. Celebrate this harvest festival with traditional atte ka halwa. The recipe used is the same as is used in Gurudwaras to make KADAH PRASAD.

Ingredients:
Atta ( Whole wheat flour/chakki atta) 1 cup
Sugar 1 cup
Ghee 1 cup
Water 2 cups

Hi Poonam, congrats on this perfect recipe. Exactly as my mom makes it. You rightly mentioned that if made with mota pissa atta, better it would be.
My mom says never wear chappals and keep your head covered when preparing kadaah- it will turn out beautiful!

Fantastic as always. In Lahori Kadah sugar to flour ratio is 1.5:1
The flour goes more transparent. I keep a little ghee aside, to add when Kaddah is nearly done.
Thanks for the input. I am reminded of my childhood days when dad used to prepare halwa with loads of sugar. It tasted great then. Now, if I think of it probably I will find it overly sweet. However, traditional recipes have their own place in our cuisine. lots of respect for that..that's where the present has evolved from!

Hi Ritu..you can definitely add boiling sugar syrup to the atta mixture but please proceed with caution. It would splutter more than as shown in the video.

You are welcome Shilpa. The authentic recipe of kadah prasad does not have cardamom powder, and actually the recipe doesn't need it either, since the ghee renders an awesome flavor to the halwa. However, you could add cardamom powder if you wish.

Anitha, you could reduce the amount of sugar as per your taste. You would not need to change anything else in the recipe.
@@poonamskitchen Poonam, I tried recipe for first time. I don't have much experience with halwas in general. Since my guests were vegan, I used half vegan butter and half refined oil. What happened is the halwa did not release fat like in your video. As a result I kept it for longer hoping it would. Sadly, it never did, and became dry :(. What do you think went wrong?
@@Anione111 Sorry to hear about your experience. I am wondering if you used the proportions as shared in the video, equal ratio atta to fat (ghee in my case)!?
Vegan butter or for that reason any butter has a low smoking point as compared to refined oils. I would personally avoid using these together in a recipe. Refined oils and ghee can go together as both have high smoking points. However, the combination of butter and oil doesn't seem to be the reason of the problem you faced.
I just have a feeling that in your case the ratio got messed up. I make suji (rava) halwa with less oil/ghee wherein, fat doesn't get released because there is no extra fat, which is okay from a cooking standpoint. All the fat in the recipe is absorbed by the suji grains.
You could make atta halwa with less fat but it tastes good with high quantity of fat only
@@poonamskitchen Your point re butter and oil duly noted. Coming to my semi disaster, yes i used the stated proportion but in combo as i mentioned. When I think now, ghee does release best of all fats, that is why some people prefer to cook curries in it to give the rich feel. Since i did not use ghee at all, i should have known better and stopped in 7 min or so, using your video as a guide. I know better now. Anyway, I tinkered with the leftovers, and made it awesome again :), though I would make it less sweet next time around. Thanks for replying. Its really nice of you. Recently, I redirected a viewer who had a query, from another vlog, where the vlogger never bothers to reply, to your channel by providing him/her your link. It was naughty of me😉

Jasbir ji, I saw your comment on this thread or on some other video regarding addition in your family. I can't find that comment now, so replying right here.
First of all, heartiest congratulations to you and the family. My love and best wishes to the new baby. For making panjeeri, you could refer to my video on making atta laddoo. The basic recipe remains the same, just skip the besan in that recipe and add atta instead. For making panjeeri for the new mother, also add 1 tablespoon sounth (dry ginger powder),and 1 tablespoon ajwain powder. Saute these spices in ghee for a few seconds and add along with the meetha. Here I would recommend you to use desi khaand/ bhura rather than white sugar. You may use gud ki khaand if available. Add walnuts, and phool makhane along with other dry fruit. Phool makhane need to be fried just like gond shown in the video. Most important in this panjeeri is 'kamar kas'. That also needs to be fried like gond. Just like the name suggests, Kamar kas helps a lot in muscle recovery. Also recommended in this recipe are 'khas-khas' and shredded dry coconut. These will be added in the end along with the meetha.
Hope this helps. I will definitely share the video but that would take sometime, as I would be making panjeeri only when the weather gets colder
