The only difference in cooking methods is texture & whether it's an all beef hot dog or a meat slurry hot dog. These carts have all the fixings though which help tremendously cover up error in the type of hot dog akd the way it's cooked. Either way, just like pizza....even a bad hot dog is somewhat edible. As long as you dont put any ketchup 😂😂

When the cars drive-by exhaust and dirt get all over your food situation they don’t wash their hands or wear gloves so they’re handling money and food. No health department guidelines are practiced.
About ten years ago a NYC TV station did a hidden camera on the vendors. Many of them left hot dogs they didn't sell that day in buckets sitting on the floor and reheated them the next day. These areas the carts parked overnight was crawling with huge rats and sometimes the rats would chew into the plastic buckets and chew on the hot dogs. Gross
I worked for a polish restaurant, they smoked their own sausages at home. I saw sausages come back gnawed on. Rats in his garage, and he left the meat out overnight, as it was very cold out. Cracovia in Denver, worst place ever.

You can tell the onions and kraut are old the way the containers have burnt on food. I’m sure it’s okay to serve them. Kraut in pickled so it last forever. Onions will get mushy like baby food. The hotdog looks fine. You can tell when a hotdog is water logged. They’re extra plump and grey.

Plus I know in California tongs, brushes, utensils, and containers like that have to be changed every 4 hours. I don’t know the state laws there but that’s way longer then a few hours.
The only thing you REALLY have to watch out for is the color of the dog. Reddish is cool, but grey or even slightly green dogs, hand it back. Or just get a hot sausage, I've never seen a bad one.

I've never eaten from one of these carts and I've been living in nyc for over 10yrs. Are there truly clean and honest ones? Sure, here and there you might find one. But there are many more that are shockingly dirty and will rip you off by not posting prices.
