I think it's because tomatoes can sometimes make your guacamole watery, some people are turned off by the chunks, and the fact that Chipotle is famous for their guacamole and they leave them out.
Even though you added lime juice, it might turn brown. What I do once the level goes down, I smooth out the top. Then trickle in cold water to cover it. It's now protected by a water seal and won't turn brown.
Please trust me on this! Just add a small drizzle of extra virgin olive oil and you NOW have the BEST guacamole ever! It enhances the creaminess and depth of texture somehow highlights the avocado flavor. Try it!

My kids don't like onion so I leave it out but add a pinch of black pepper and a tsp of cumin.
