How about instead of focusing on you'r arm/ legs / eyes , try to focus on what the hell are you doing there and why do you want that job and what you will bring to that job.
What about if you slap the interviewer?

I have a interview coming up and I know i have a issue over using my hands out of nervousness...
I'm trying to be mindful of it.

I hold my hands together because when they're not actively doing something my "minor motor tic disorder" (what used to be called Tourette syndrome) will flare. Any suggestions?

woa woa woa it's not Tourette Syndrome? My whole life (however short it has been) I've said Tourette Syndrome when the hell did it just change to minor motor tic disorder? :O I've never once heard that one before at all

What do I when there is no table to put my hands on?
IMO steepling is popular but has no real meaning. The only meaning is that if you don't do this, then you haven't seen videos like this (so you didn't tried to shape yourself to something what others tell you). 2nd thing: What is considered as "overuse"? What are the message of energetic, lively gestures if not that the person is energetic and lively?
Well, you're free to try and apply all of that on your next job interview, bro. I hope you never need one.
What if you are not sitting on a table?
I always wonder why the white guy put his hands like a temple when he was interviewing me. I end up getting the job two weeks later he's fired then I turn around and put my hands like that. 🤣🤣🤣🤣🤷😡🤣
