  • One Pot Chicken and Rice | Easy Chicken Rice Recipe | One Pan Chicken Rice | Chicken and Rice Casserole | Chicken Rice Bowl Recipe | One Pot Meals | Chicken Rice Recipe
    Ingredients for One Pot Chicken Rice:
    Boneless Chicken pieces- 500 gms
    Basmati Rice- 2 US cups measure (375-400 gms)
    For Marination:
    Turmeric Powder- 1/4 tsp
    Red Chilli Powder- 1.5 tsp
    Whisked Curd/ Yogurt- 4 tbsp
    Salt- 1 tsp
    Whole Spices:
    Star Anise- 2
    Whole Black Peppercorns- 10-12
    Bay Leaves- 2
    Spice Powders:
    Coriander Powder- 2.5 tsp
    Garam Masala Powder- 1 tsp
    Other Ingredients:
    Onions sliced- 2 (150 gms)
    Green Chillies slit- 2-3
    Ginger Garlic paste- 2.5 tsp
    Coriander leaves, chopped- 4 tbsp +1 tbsp for garnish
    Mint leaves, chopped- 2-3 tbsp
    Salt- 1 tsp
    Refined Oil- 3- 4 tbsp
    Thick Coconut milk- 100 ml
    Water- 500 ml
    Preparation:
    Marinate the chicken pieces with items mentioned and set aside for 30 mins.
    Also wash and soak the Basmati Rice for 30 mins.
    Slice the onions, slit the green chillies and chop the coriander & mint leaves.
    Prepare the coconut milk or use readymade.
    Process:
    Heat 2 tbsp oil in a pan and place the marinated chicken pieces side by side. Sear the pieces on high to medium heat for 3 mins till browned. Flip on the other side and repeat the same for 3 mins on the other side. Remove and set aside on a plate.
    Add another tablespoon oil to the same pan and heat it.
    Add the whole spices, give a stir and add the sliced onions. Fry on medium heat for 5-6 mins till light brown in color.
    Add the ginger garlic paste and fry on low heat for 2 mins.
    Add the fried chicken pieces back to the pan and stir fry for a minute.
    Now add the coriander powder and Garam masala powder. Mix and fry on low heat for 2 mins till the chicken pieces are coated with the masala.
    Now add 100 ml coconut milk & 500 ml water and give a mix.
    Keep the heat on high and add slit green chillies, chopped coriander & mint leaves and 1 tsp salt.
    Give a stir and wait for the water to come to a boil.
    Add the drained rice to the boiling water and give a gentle stir. Cook the rice on medium heat for 5 mins.
    Again give a gentle stir, reduce the heat to low and cover & cook on low heat for 5 mins.
    Remove the lid, give a gentle stir and cover and cook on low heat for another 5 mins.
    Once done, garnish with chopped coriander leaves and let it rest for 15-20 mins before serving.

      Hello, i have a couple of questions. Did you use greek yogurt in the marinade? Also, if someone doesn't like Coconut Milk, what can be used as a substitute?

      And the closest substitute would be almond or cashew milk though there’ll be slight variation in taste 😊

    I might be bias, but hands down Asian food is the absolute tastiest. All the range of dishes with their wonderful flavours…..gorgeous. And this dish looks absolutely yummy I will definitely be trying it!

      What would your rate be for the spiciness of the end product? This recipe looks great but my spouse is sensitive to hot spices so. I know I can leave out/replace various ingredients and still make this dish but if the final product isn’t that spicy it would be great to use the recipe as is. Thanks!

    I tried this recipe and it came out sooooooo well!!!
    However, I tried without the coconut milk. One tip: Go easy on the spice if you are not adding coconut milk as mine turned out a little spicy. Overall, a very successful attempt!

    My family loved this recipe. I didn’t add the chilli powder nor black peppercorns, as I didn’t want it too spicy. And I tripled the recipe using 1.5kg chicken breasts and 3 cups of jasmine rice. For every 1 cup of rice, I used 1.5 cup of water. Will be cooking this again in a weeks’ time.

    Fantastic-looking dish. It’s my dinner plan for tonight.
    So many of these recipes call for coconut cream or milk that I am now in the habit of keeping coconut cream on hand. It can be used in cream form or easily converted to the milk version by adding water. If I open a can and don’t need it all (which is usually the case), I measure out the remainder in recipe portions and freeze for later use. Ice cube trays are great for this purpose.
    For all those questions concerning coconut milk substitutes, just leave it out if you don’t have it. It changes the flavor profile just slightly but not enough to make a huge difference. In fact, if I didn’t have coconut on hand, I’d use chicken or vegetable stock instead of or with water to still provide some additional flavor. I try to avoid adding anything that doesn’t add flavor. Water alone just dilutes the flavor in my opinion. But then again, if water is all you have, it’s still better than not making the dish.

    I just made this, so good. I am allergic to coconut, so I just used whipping cream instead, just put it just before adding rice so it doesn't curdle. Next time i am going to try buttermilk instead. It did need more water than in the recipe and I put lid on it tool Amazing dish!

    Excellent, I actually make this a lot of times in case of a hurry. Use two drops of rose and one drop of kewra water(extract distilled water from pandanus flowers) and it will smell something heavenly.

    I recommend using bone-in chicken it may take a little longer to cook but the flavor from the bones is what takes it to another level and makes it taste authentic

    Years ago, I had a coworker who was born in Pakistan. He emigrated to the U.S. as a young adult. He would often bring dishes like this for us to eat. Some people were distrustful and wouldn't eat. But, I wasn't one of them. The dishes were DAMN GOOD. Let me tell you. I ate the hell out of them. Stuffed myself. People from this region of the world have a special gift when it comes to this.

    I made this dish twice, first time it was super duper delicious, but second time I sort of messed it up. But definitely, an amazing recipe. I made it without pudina(mint leaves), as here we aren't much pudina fan, but it still came out really good. Worth a try and it gets prepared really quick (excluding marination time).       There's no reason to not make this even if you're on a diet. Rice is one of the healthier carbs!
      Besides, staggered fasting is actually a healthier and more efficient way of losing weight whilst maintaining wellbeing since it allows you to eat food you actually enjoy.

      hi! this is not the answer to your question but you can find coconut milk on bigbasket, or in grocery stores, dabur is selling homemade coconut milk in tetrapacks these days

    I have tried it couple of times the only change i've made to the recipe is instead of normal spices, marinated the chicken in tandoori masala and damn it came out yummy all the time.
