Interesting! In Trinidad & Tobago in the Caribbean, the most commonly cooked dish in all household is "pelau", cooked just like this recipe, except that the meat (chicken or beef) is integrated into the rice.
That’s interesting to me because in the American southeast, particularly the Carolinas, we cook pilau (aka chicken pilau) but the chicken, along with other meats (usually different pork’s and beef or pork sausages) are all cooked with the rice. It’s probably the most popular rice, other than white rice, where I live. Most outsiders come here and never heard about it or think it’s jambalaya rice - and it’s definitely not.

That looks yummy! Are the rice ratios right, total of 3 parts liquid to 4 parts rice? My rice always turn very dry if I dont cook minimum 1:1, was wondering that.

We don't have jollof in East Africa. It's a west African dish. We borrow the recipe from W. Africa.
