Don’t they cause an insulin spike the same way as real sugar? I’m wanted to eat only whole foods if I can help it. Any insight you or anyone else can provide would be very much appreciated
These look great and I can't wait to try making them, but...why does everything have to replace protein bars!? Am I the only one who actually likes them? Barebells and Grenade bars taste really good and I don't have to spend 30 minutes making them/waiting for them to bake and doing a bunch of dishes. I like making treats like these once in a while, but I usually eat 1 or 2 bars per day.

Your body makes erythritol naturally, not only was the study poorly designed but it did not account for that. Erythritol is fine, but stevia/monkfruit are great too!

Most suck. Buy pure monk fruit powder it’s hard to find and allulose it has no flavor mix them. Make sure they are pure single ingredient items. Lakanto isn’t
I love most of your recipes but I have an axe to grind here because they’re recurring themes. 1. Neither whey nor casein enhance baked goods. It always makes them taste worse, feel worse, they both denature in heats above 160f. You’re destroying your protein powder’s protein content and making your recipes feel and taste worse. You’re better off using casein-only if you’re dead-set to use any dairy-based protein powder but I recommend neither. 2. More 0-fat Greek yogurt. It’s almost as protein-dense as the powders but it makes the baked goods more moist. If you’re dealing with a recipe where the tanginess sticks out, a very small amount of baking soda neutralizes that flavor. 3. No-sugar-added applesauce for sweetness and moisture. It works well but it will add a noticeable apple flavor. 4. Less powdered sweetener more 0-cal or low-cal 0-sugar syrups. Most sugar-analog non-nutritive sweeteners (NNS) degrade in sweetness at high temps. Syrups do far better for baking at high temperatures. (optional) 5. Soluble corn fiber. Not only does this thicken the batter, it adds a decent amount of fiber and the mild corn flavor rarely makes baked goods taste worse. These aren’t just critiques from out of left field. I’ve tried a lot of your recipes and quite a few of my own, and I’ve sworn off using whey for baking, found the syrups to be more potent sweeteners, and the moisture from Greek yogurt and no-sugar-added apple sauce to really help out. Casein, while it does lose sweetness and denatures when baked makes a really cool dough-alternative for crunchy baked goods when they’re dehydrated. They’re awesome for dipping in milk or scooping up PB-powder pseudo-Reese’s. Not poo-pooing on your content. It’s mostly great. Just please stop destroying whey and palettes. I know making something that tastes better than a protein bar can be exciting but let’s be real here, most protein bars with good calories-to-protein ratios taste bad. It’s not the highest bar to overcome.

Just a lil bit of honey is enough to kill the tangy taste! Imo its worth it! But u can do sf maple syrup too if youre too worried about the calories

Might not get thick, use flour or pb powder or something that is thick and is not whey protein powder
