100% Whole Wheat Honey Sourdough Sandwich Loaf (SAME DAY)

  • Ingredients for 2 loaves:
    1000 g freshly milled whole wheat (I used hard red wheat)
    700 g whole milk or milk of choice
    240 g fed and active sourdough starter
    113 g melted butter
    113 g honey
    7-10 g salt to preference
    Directions:
    Knead all ingredients until a smooth ball forms.
    Cover and let rest for 30 minutes.
    Perform the first set of Stretch and Folds. Cover and let rest 30 min.
    Perform the second set of Stretch and Folds. Cover and let rest 30 min.
    Perform the third set of Stretch and Folds.
    Cover and let rest for 2-3 hours, or until doubled in size.
    Once doubled, divide dough into 2 equal parts.
    Shape each loaf and place in a greased loaf pan.
    Cover and rest for another 2-4 hours, until the dough rises past the sides of the loaf pans.
    Bake at 350 degrees F for 35-45 min, or until the crust is deep golden brown.
    Let cool before slicing.
