That game is what introduced me to Warhammer. So one can imagine that I may have a “slight” bias towards them.

Although I do think Knights need more variety in theme, such as Samurai and Mesoamerican, I think a good lore justification is that their effective arsenal is limited. It is difficult to re-design a 4m chainblade into a katana, and the mechanicus, a necessary aspect of all knights, be it Questoris Mechanicus or Imperialis- is incredibly reluctant to allow anything new. Their stance is all knowledge of the machine god exists in the form of STCs, and innovation is heresy.
That said, I think knight houses have a good variety of different traditions, attitudes, and alignments to not be more than a fresh coat of paint. There are more noble and respectful houses, there are more apathetic and bloodthirsty houses, there are those obsessed with the Omnisiah, and those who fall entirely to chaos. Some houses do hour long reciting of past pilots, and others that view knights as tools needing subjugation rather than connection. There is a variety beyond the style and equipment although in form are near identical.
And if you are a particularly experienced modeler, you can certainly sculpt custom weapon weapon models and decorations to fit an entirely unique theme. Knights aren't necessarily limited to their "knightliness".

The worst thing about playing 40K is that a price tag that is slightly less than €700 is considered to be reasonable.

Could a knight pilot who fought in the horus heresy be alive in the 40k setting? I know its not unreasonable the knight itself would, but the pilot?

They're in a rough spot after the Balance Dataslate, however, I can look past that because ever since I started playing in 9th edition, no army had given me quite the same joy when playing them.
House Terryn's color scheme is also very pleasing to the eye.

I just got back in with Leviathon box, and after 5 months I have 3 armies easily over 3000 each of course Knights being my 3rd. At first it was just going to be one knight, now its 3 questoris, armiger, 3 valiants, 1 lancer and 1 archeron. They are just that cool

13:30 That’s lazy GW writing unfortunately. The lore states that knight worlds are unique and varied in their culture and set up, but other than House Terryn, the blue boys featured on most Knight artwork, they’re all medieval feudal worlds. And even Terryn is still feudal to a point, though they are much more open about allowing the common man rise up to be a Knight Pilot through hard work.
The hardcore medieval thing works great for Hawkshroud, who live in a miserable, cold, rainy world and hold a man’s word and honor above all other ties and responsibilities. It adds a good flavor to their ride or die ally mentality in that it’s based on the fact even the nobles of that House live in conditions even mid level Hivers would consider poverty stricken.
The biggest perpetrator of the Knight Houses being somewhat flavorless is the mechanicus Houses though. How in the world does the Adeptus Mechanicus, who relies on these sworn Knight Worlds to feed and clothe the billions of laborers on their Forge Worlds, allow these guys to retain a feudal hierarchy? What if the king dies without an heir? You’re telling me the Mechanicus is just going to let these massive war machines duke it out in a civil war over the rulership of an agriworld they’re depending on? You’d think their Houses would be strictly controlled by the Mechanicus, to the point where their marriage contracts and child rearing are run entirely by a Magis Biologis, and that the “King” is appointed by the most senior Magos on the planet.
