    When Carol put said she was putting both butter and chili on her biscuit, I was like now she's officially being Americanized. 😂 I top my chili with cheese and sour cream too. Chili and cheese is also great on fries or hot dogs.

    The chili powder packet isn’t where the heat will come from. The small red packet is red pepper. The instructions indicate how much to use depending on your tolerance to spice/heat. I brown the ground beef with chopped yellow onion and green pepper. Then drain (not down the drain) the mixture and resume adding other ingredients in the box. I also add a can of diced tomatoes and chili pinto beans. Yum.

    Depending on what part of the country you live in, Americans add red kidney beans, green peppers, onions or pasta to their chili. Personally I never use water in my chili, only use diced tomatoes and tomato sauce to make it “soupy”. Leftovers are great spooned over a baked potato with cheese and sour cream 😋

    As a Texan, born and bred, I am legally obligated not to comment on the taste, if I haven't tasted it. Nor can I comment on the bean vs no bean debate (that's supposed to be funny, by the way) but it looks like you did it right and it looks like it smells and tastes right. I will say, I add diced onion to my chili but I understand the reason you didn't. The biscuits came out beautifully!

    I used to work at Red Lobster in Fayetteville, NC many years ago. I started as a server, worked as a bar back, then moved to the back as an Alley Co-ordinator. They're the people that actually check the food for temperature and to make sure it's properly prepared. Those Cheddat Bay Biscuits in the box are exactly like the ones in the restaurant.

      This is not a cooking show…it’s a singing and dancing while you cook show! I’m with Carol…bring on the spice!! We make our own chili from scratch, but I’m going to have to get the cheddar bay biscuit mix! Looks so good. I can tell when Carol likes a new taste…her eyes actually rolled back in her head!! Love watching you, you make my day!!❤️❤️❤️

      Agree, I personally can't tell the difference between the restaurant biscuits and the box biscuits, although I add more cheese to mine - I buy the box mix at Walmart quite frequently, very good!

    Instead of draining the grease, I put some paper towels in the pan to soak up the grease. It's easier 😌.

    Cheddar Bay biscuits are my all-time favorite biscuit! I always get extra whenever I eat at Red Lobster, and once the mix came out in stores, I couldn't resist making them at home occasionally, no matter how unhealthy they are. They are so _GOOD!_

    It looked like Recky went very light on the butter mixture he topped the biscuits with. You're meant to drench the biscuits in that butter mixture (you're supposed to use all of it). It gives a LOT of flavor and ensures the biscuits are very moist. The biscuits in the restaurant tend to be thinner as well, so the butter mixture will penetrate more into the interior. I'm sure they still tasted wonderful though. :)

    On your next cold winter night, a hot bowl of chili hits the spot. You can add diced onions, diced or crushed tomatoes, diced green bell pepper, but most important is to add Kidney Beans (drain sauce from can). Some people pour the chili over rice or baked potatoes. The more cheddar cheese on top, the better. You guys did a great job. Chili can be stored in the freezer for several months.

      Or do what we do and boil up some hotdogs, take the hot hot dogs out of the water and slice them down the middle, put them over bread, and then put chili over the top, and eat with a fork. Yum! Kinda like an open-faced chili dog, or franks & beans on toast...

      Sometimes I take a jar of my Kitchen Sink Chili and mix it with some of the heat & serve rice mixes that come in the pouch...like wild rice & long grain... and use it to make stuffed bell peppers topped with shredded pepperjack cheese. 😋

    The biscuits can just be put on a sheet pan. You don't have to put them in a muffin pan, because they don't expand like a muffin would.

      Yeah, I'd never seen or thought of cooking them in a muffin pan. Just spoon drop on a cookie sheet, like the restaurant does. 🤷‍♀️. But as long as they turn out cooked well & taste good.... 😉🥰🥰

    Chili is likely to be a shock. It was originally meant to feed prison inmates in the 1840's Texas. Many people skim the fat or drain most of it. Some leave it all in. Masa is more of a New Mexican addition (I do it too sometimes). Chili was 'civilized' for respectable folks in San Antonio in the 1870's. Carol is right. It is the red pepper you need to go easy on. Everything else goes in.

      Another nice option to spice up one person's bowl is a spoonful of adobo sauce from a can of chipotle peppers.
      Of course beans are optional. Personally I like garbanzos in my chilli, and a can of stewed tomatoes.

    The masa will thicken the chili. I love cheddar bay biscuits. And I do add butter. They are so good! Next time you make chili, try it with cornbread! Can't beat it!

    I love the "Not a Cooking Show" shows! As usual, you both did an amazing job. This video made me soooo hungry. I'm going to ask my wife to make chili and corn bread for dinner. For the record, she makes an amazing chili.
    We also make a Green Chili, which is used as a dip for tortilla chips, or can be used as a topping for nachos and burritos. It is made with chunks of pork shoulder that are cooked down until very tender on the inside and crispy on the outside. It also has lots of onion, diced green chili peppers, diced pickled Jalapeños, diced tomatoes, tomato sauce, chicken stock, and lots of spices. It is simmered over a low heat for hours. Damn, I had better stop, now I am really hungry! Moa is SO cute!

    I make Wick Fowler Chili all the time here in Texas. They used to have a little packet of salt in the box and then people got all up in arms about too much salt in food so they got rid of it. Yep, you need to add a teaspoon of salt to the chili while it's cooking. I add a 16 oz can of diced tomatoes to mine. Edit: Sorry, I forgot to add that the left over chili is great for making chili dogs topped with cheese. Or you can make open faced chili burgers. Both are very American.

    Masa is ground corn, also known as corn meal.. It is used to make corn tortillas.

    Everyone makes their chili differently. People in Cincinnati put spaghetti/pasta noodles in theirs (odd 😂) lol. I brown my meat in a big pan then add the sauce. Add in green peppers, onions, kidney beans (drained) & then use chili powder. I let it cook for hours on low heat. When I eat it I add the cheese & I like to have bread to soak in the chili & eat it. I make enough for leftovers for a few days.

    Chilli is the all-time, universal party food. Eat it straight with chopped green onions, cheese and sour cream, and anything else you want to sprinkle on top, or as a dip with fresh tortilla chips, or over rice or pasta and your favourite toppings. Our little office used to have an open house party every Christmas and our boss always fussed and fumed about people carrying food back to their workplace. Then we started having a Chilli Christmas party and served Red Chilli and White Chicken Chilli.

    Chili with biscuits, perfect meal for a fall/winter day. If you want it a little spicier this is a good chance to add a little of your bottled hot sauce to kick it up. If you have leftovers get some hot dogs and buns and make chili dogs.

    A great American tradition is the chili cook off - like a pot luck at work or in the community where people offer up their chili for everyone to eat. Someone wins an award for the best chili, and often you have a category for the worst chili - and people will make the most repulsive chili they can think of to win that award 😂

    Curse you Recky and Carol! Now I have to go the store for cheddar bay biscuits and chili. I'm so glad you liked the chili and biscuits. You can add kidney beans, jalapeños or anything you like. My mother used to serve chili over white rice. It goes a lot further with 7 mouths to feed. I also like Frito corn chips with my chili. Carol, your love for the flavors show. I love your reaction when you love something. Great job " cooking" Recky!

    Personally, I think the Red Lobster Cheddar Bay Biscuits are the best you're going to get out of a box. They are too delicious and dangerous to someone like me who could eat the whole box worth of them in one sitting if they're left at my side, especially if I use my favorite NY style extra sharp cheddar cheese in them or the Cracker Barrel Aged Reserve Sharp White Cheddar. 😅 OMG, so DELICIOUS! 😋

      Your right the true Texan chili is without beans esp if you enter your version in chili cookoffs but I love cooking dry red beans or if there is limited time you can just add a can of drained jalapeño ranch style beans into the chili is great too.

      Or Bush's Chili Beans. Besides, the ground beef with either McCormick or Carroll Shelby's chili seasoning mix (mild, medium, or hot), chopped onion, chopped garlic, chopped bell pepper (red, orange, or yellow as I can't eat the green), a can of diced tomatoes preferably Rotel Tomatoes with Green Chiles (which comes in mild, original, fire roasted, or chipotle), either Bush's Chili Beans or Kidney Beans, for the youngest great grandchildren I add a can of sweet corn (drained) to add a bit of sweetness and tone down any spiciness. A word of warning - red pepper flakes are great to add heat, but if you add them to a large batch and don't eat it all at once, the longer it's refrigerated the hotter it will get. A side of cornbread dripping with butter is a must!

      Yes, Texans are mostly intolerant of the beans but they do taste good in there anyway. I usually eschew adding them to my beef chili but I always add white beans, prefferably cannellini, to my pork green chili.

    Masa is Spanish for corn flour. As the masa cooks, as any grain, including wheat flour, it thickens the sauce.

    I LOVE YOUR REACTIONS! Nothing beats a good Cheddar Bay biscuit. Everybody over here has a chili recipe - but there's only 1 Cheddar Bay biscuit! As soon as the temperatures drop in the fall the whole dang country cooks up a big pot of chili! And Recky, sour cream takes the fire out of your mouth WITHOUT FAIL - so spice up that chili! The look on your faces when you taste our food for the 1st time is as good to me as the food is to you! I'm going to watch the taste test again!

    Masa flour (or masa de maíz) comes from ground nixtamalized corn, meaning the dried field corn was processed with lime (the mineral, not the fruit), by being soaked and cooked in an alkaline bath that makes it easier to digest. It's an ancient Mexican method.
    Wikipedia says of it, "Nixtamalized corn has several benefits over unprocessed grain: It is more easily ground, its nutritional value is increased, flavor and aroma are improved, and mycotoxins are reduced by up to 97%-100% (for aflatoxins). Lime and ash are highly alkaline: the alkalinity helps the dissolution of hemicellulose, the major glue-like component of the maize cell walls, and loosens the hulls from the kernels and softens the maize. Corn's hemicellulose-bound niacin is converted to free niacin (a form of vitamin B3), making it available for absorption into the body, thus helping to prevent pellagra. Some of the corn oil is broken down into emulsifying agents (monoglycerides and diglycerides), while bonding of the maize proteins to each other is also facilitated. . . . As a result, while cornmeal made from untreated ground maize is unable by itself to form a dough on addition of water, the chemical changes in masa allow dough formation."

    If it's Corn Starch (Corn Flower) it can be added at the end. However, if it's actual Flower(made from wheat) it should be added to the meat with it's fat so it can cook so it doesn't make it taste wired

    Instead of draining the "fat" if your pan is wide enough you can cook down the rendered fat back into the meat as flavor.

    Most people don't know this. Fine restraunts do not over spice their foods, they let the customer do that at the table according too their individual tastes. That's why many people are disappointed because they don't know the etiquette of fine dinning where the Chef has prepared a dish left to be spiced by customer to their liking..!!!

    A small subtle change to "spicy" that nearly every palate likes is chipotle powder rather than cayenne or red chili etc. It is a chili, but a smoky much softer warm spicy, rich and a little hot but more flavor of spicy than heat

    Cook the chili without the lid so the water in the chili evaporates and thickens the chili. Most Americans add canned beans (kidney, black beans or chili beans). Yum!

    I like Guinness in my Chili. Every family has recipes for everything. Some people don't care for some spices or ingredients. Corn Bread is an awesome flavour and could put Jalapenos in it. 😊

    I think today is a triumph! Looks like everything turned out perfect and delicious! I really like it with some fresh chopped onion added on top, and/or green scallion. Dipping the biscuit is great. When i was a kid we most often ate chili with saltine crackes crumbled on top or sometimes with cornbread. Another variation is "frito pie", which is chili spooned over Fritos brand corn chips with cheese and onion, etc...The fritos soften slightly but retain some crunch and the corn flavor is a great compliment to the chili.

    It makes me so happy to sit here & watch u guys like the make everything & doing a great job & then eating the chili( I always put pinto or kidney beans in my chili but real Texas chili doesn't have beans) & one of my favorites Red Lobster's( seafood restaurant chain all over America) cheddar bay biscuits believe it or not the ones at the restaurant are 10× better & they give u a free basket of them when u sit down. I always get a free refill on sweet tea with lemon & another free basket of cheddar bay biscuits they keep filling up ur basket. Then I get a to go box to take the extras home. U can buy frozen cheddar bay biscuits in our stores but I didn't like them at all, a very artificial taste. Yum. You did a fantastic job u two, & sweet mooah(sorry) bringing u her bird as a present reminded me of my sweet angel now Baby would bring me her toys & put them at my bedroom door. They are so adorable and sweet, thank you so much 🙏🐱🐦😍🐈🤎😻

    You can sauté cherry tomatoes in cast iron, but don't try making a long-simmering tomato sauce. If you recently purchased your skillet and it still needs to be "broken in," acidic ingredients can erode the seasoning and even make foods taste metallic.

    Now you need to try Chilli Cheese Frito Pie! You take regular Frito Corn Chips and pour some in a bowl and then spoon on a generous topping of chilli (whatever style you like) and then throw some fresh chopped onions and cheese (cheddar) and if interested sour cream and jalapenos on top to finish it off! Frito Chilli Cheese Pie - yummm yummm.

    Nice chili y'all! Now dream of all the fantastic ways to get through the rest of the pot. Cornbread, corn chips, nachos, or those big hotdog sausages you cooked last week would all be fantastic. Chili freezes well so save for another day if you want. Those biscuits looked perfect. I'm sure your brain is thinking of how they'd match all the Swede dishes. You can make them just as easily from your pantry if you can't find a box at your store.

    Chili is fun to make ..you can be kind of an alchemist😊. I started simple yesrs ago and now its quite a production. I do cheat a bit by using a couple of starter packets, then kind of wing it. I make a big batch.. starting with 0.5 pound of cooked bacon, 1 pound of ground beef or ground turkey and 0.5 pound of canned ham ( when unavailable I use ham hocks); red onion and yellow onion; couple of large cans crushed tomatoes,one small can of tomato paste; several gloves of garlic or dried powder equivalent; several colors of bell peppers and sliced jalapenos added near the end; 5 to 8 cans of different beans - at minimum Navy beans, kidney beans, black beans and chickpeas; corn niblets; dark chili powder, black pepper and cumin. Of course I also add a splash of really hot hot sauce. Pile it sll in my big slow cooker and let it run on LOW for @ 4 hrs. A liitle trick to reduce acidity a bit, is to throw in a large carrot cut in 3 or 4 pieces. (You can pull them out before serving or canning)
    Then top it with a sharp shredded cheddar or a good shredded PepperJack. I end up with almost @ 8 liters which I seal in 1 ltr jars a store in the fridge. If they seal correctly the last over a year in the fridge if the fridge is cold.. works out really well when I'm unable to cook because of my disability and when I grabbed one of these along with a little cornbread it's an absolutely complete meal. 😋 Never rule out going "mad scientist" when cooking. It's fun and can really pay off.😊

      @@tomadkins2866 Once you decide to use The alchemist/adventurer approach, it certainly helps to have dogs in case the project goes south LOL. Actual ingredients were never much of a risk ..my particular bane was the herbs and spices. After so many years I'm still working on that one 😅

    Easy trick to drain off oil is to roll up some paper towels, clear a spot in the corner of the pot, put the paper towel in it, and tip the top.

    Cornbread is generally the accompaniment for chili. I normally use canned ccorn niblets... add a little bit to the cornbread mix along with a bit of the packing juice.

    It was supposed to be the entire packet of masa in a total of only half a cup of water. . .
    Cheddar Bay biscuits are baked on a sheet rather than in a muffin pan so the _entire_ top can be soaked with the melted garlic butter.

    The Chili and Biscuits both look delicious! great job you guys! I always make a huge pot when making Chili! It's one of those things like a good soup or sauce that is just as good if not better as leftovers after a overnight rest in the refrigerator! All of the spices get more time to meld together and create a deeper flavor! plus who doesn't love a easy heat and eat meal for the next day or two so you don't have to cook again! 😂 Like others have said.. Chili and cheese are great on rice, baked potatoes, fries, nachos, hot dogs or even spaghetti noodles(if you're going for skyline style chili) you can also put a bit of chili and cheese in a tortilla and roll it up then microwave it for a chili cheese burrito the ways to eat it are practically endless! Very versatile! Easy to make one big pot and eat it different ways for a few days! yum!

    Im a Native Texan...and that 2 Alarm Chili Pack is what i use. On a "cold" day, that is soo soothing. Masa is a personal preference and mine is not to put any in...i like my chili a bit soupy. There are so many things i do with it after the first day of a bowl of chili that i enjoy...making frito pie, enchiladas...the same base...but different meals....sooo helpful with cutting down on the cooking for a few days. That looked sooo good watching ya make and eat it....brought a craving....bring on the cooler weather so I can make my first pot of the season!

    Also cornbread and butter is great with chili. Do y’all have crockpots? They are a slow cooker and like with the chili you could take it and brown your ground beef with onions and whatever aromatic she like and then put that in the crockpot and add all your ingredients and put it like on slow and let it cook all night or all day and then it’s ready for dinner kind of a easy way not to heat your house up off you know using the oven or stove.

    If you don't put a lid on the pot when cooking the Chili it will thicken more on it's own as it allows some of the water to boil off. Also, once it starts boiling you can turn the stove down to 2 or 3, and it will continue to boil, but won't cook too quickly.

      Depending on how lean the meat is, I usually do too. The flavor is much better, but too much can make it very greasy and bothers my stomach. Here in the US, some hamburger meat has way too much.

    Chili is one of those foods that you can play with and get the flavor to your taste. You can add onions or peppers or tomatoes. You can add pinto or kidney beans. You found that cheese and sour cream are good toppings, but growing up, we would crumble crackers on top or sprinkle some Fritos (corn chips) on it. I actually make my own chili now, using a recipe I created from two other chili recipes, Dallas county jail chili, and Lady Bird Johnson's (the first lady of president Lyndon Johnson) chili recipe. I call it "Jailbird Chili." 😁
