I’m Puerto Rican and my mom made this all the time. We ate it with rice and corn on the side. No fresh peppers or onions since we cooked it in the sofrito seasoning but it’s delicious and I still make it till this day.

I made this just 30 minutes ago minus the tomatoes and corn because I didn't have any. I had also to use some scotch bonnet hot sauce because I had no habaneros or scotch bonnets. Apart from the missing ingredients it was amazing and I will definitely be making this again. There's some left over for sandwiches tomorrow.
After living in Virgin Island, learned how to make Cornbeef and cabbage; loved it! Eyed the Corn beef just yesterday at the grocery- years of not cooking much (kids grown) doubting my cooking skills- and what do you know! Recipe shows up! Made your 30min Curry chix yesterday with the Green seasoning! I'm getting back in the game for my Grandson! Thanks Chris!

Macaroni and corn beef, corn beef and rice cookup are all Saturday quick cooking in my home. I cook my corn beef just like that no salt and no oil.

That looks great. What brand of corned beef do you use? The stuff in my supermarket is beyond hideous.
