Corned Beef and Rice

Corned beef is finely minced beef that is cooked and salted for preservation and taste. It can be browned with a little oil and eat on it's own or cooked along with added veggies/seasonings. Very convenient which is why it's used in many Jamaican homes for breakfast, lunch and dinner.
INGREDIENTS:
1 can corned beef
1 tbsp oil
Onion
Bell peppers
3 Garlic cloves, minced
1 tbsp green seasoning
• JAMAICAN GREEN SEASONI...
2 stalks scallion
1/2 Scotch bonnet pepper, minced
3 or more sprigs fresh thyme
Black pepper to taste
3 tbsps Ketchup (more or less)

RICE:
2 cups Basmati rice
3 1/2 - 3 3/4 cups water
salt to taste
2 tbsps unsalted butter
2 stalks escallion
3 or more sprigs fresh thyme
2 or more garlic cloves

My Uncle from Barbados makes this but he uses Chili-sauce instead of ketchup. It's very good, making it tonight for supper with rice and chicken spiced with my own fresh herbs.
