Hi Stephanie I baked this cake yesterday. I didn't have a culinary torch, and I've ordered one today. Since I use a microwave oven, broiler option naturally wasn't possible. Short of that I followed every step in your recipe. The cake looked beautiful. It got good appreciation from my friend for who's wedding anniversary it was baked!

It all depends on what I'm making whether I use a mixer. For this type of cake, while you could use your mixer, it is just as easy to mix the batter by hand.

that looks lovely. I was told that once you add raising agents to liquis ingredients, you should put the cake batter into the oven as soon as possible. Is that true? I was just wondering if it is best to prepare the apple slices first.
If the recipe just uses baking soda you want to get it into the oven as soon as you finish mixing the batter. Baking soda starts working as soon as it’s mixed with a liquid. This recipe also contains baking powder so letting the batter sit a few minutes while you slice the apples is okay. But you can do it either way.

I have found your yogurt cake recipe is THE best cake recipe to use with gluten free flour. The oil and yogurt do their job well in keeping the cake moist. Typically gf flour is very dry and causes a dry, crumbly crumb. I will definitely give this a try. Do you ever have an issue with the cake not rising as much as it could due to the weight of the apples? Looks great. Thank you!

You know, I discovered a really great hack with refrigerated butter cakes, I take the slice out of the fridge, and stick it in the microwave for 10 seconds. softens it up like a dream without drying it out

Just made this.. It came out perfect! Was so easy to put together and the texture after baking is so light... Like you are eating a cup cake ...i definitely recommend this recipe.. And it's going to be one of my go to recipes to bake and take to a friend's dinner as apples are easily available all year round 😁
I love making apple cakes in Autumn and Winter. And, I love that you have so many yogurt cakes. I'm lactose intolerant but I can eat yogurt, but milk is a no go for me and so many cakes and breads call for milk and I never have milk at home and if I get it for a recipe the leftover goes to waste. But with yogurt I can make your granola recipe and eat that for breakfast!

You could use an equal amount of melted butter. I find the cake isn’t quite as soft, but it has a nice flavor from the butter.
