  • Thank you Trish Diamond for asking me to try Bara Brith aka a really lovely fruity Welsh Tea Bread (Valerie was delighted, she said it had been years since she had some)
    Extremely easy to put together but I managed to create a faff on the cooking side, using airfryer temps etc from a Tea Bread I made months ago, I should have checked the ingredients as the Welsh version had almost triple the amount of fruit, half the sugar and half the egg quantity so it needed a slightly higher temp (150c/300f for 30 mins on BAKE setting) although every AF varies so its best to check at 25mins and extend if needed - to avoid the elongated cooking time I had on the vlog. Despite that, the Bara Brith turned out absolutely delicious, fruity full of flavour with a lovely taste of Tea in the background. Loved the mixed spice addition too, that really warmed up the flavours. Highly recommend you having a go!

    Recipe:
    250g Self raising flour
    100g soft dark brown sugar
    400g dried mixed fruit
    1 medium egg
    1 tsp Mixed Spice
    300ml Hot Tea
    Mix sifted flour with the *dried mixed fruit/hot tea/sugar mixture, add 1 tsp
    Mixed Spice and place into pre-prepared loaf tins. Preheat airfryer for 4mins on
    200c/390f. Choose BAKE setting 150c/300f 30mins, you may need to
    adjust cooking time depending on your Airfryer - check at 25mins perhaps.
    Once cooked, leave to cool in tins for 15/20mins before leaving on cooling rack
    Slice and enjoy buttered with a cup of tea, flavour improves over the next few days
    *prepare mixed fruit/hot tea/sugar ideally day before or for 3-6 hours on the day
