Lebanese Baked Kafta Traybake in tomato & potato with a rich tomato sauce - healthy family meal

This dish is known as “Kafta Bil Saniyeh” which translates to kafta meat in tray 🤣 & it’s one of my family favourites for batch cooking. The leftovers taste even better next day! This is great if you are short on time & want a nice meal after work. It’s baked meat, potatoes & tomatoes, covered in a rich tomato sauce.
For our family recipe, we don’t pre-fry anything as this is a healthier option but if you wish, you may pre-fry potatoes (or even air-fry) & add it to Traybake. Just ensure to cut the baking time in half as potatoes are pre-cooked.
You need to make the Kafta meat using recipe I posted previously & only need to use approx 500g for 12 burgers. There is another video on how to prepare the kafta meat in lamb, beef or both.
You also need:
2 tbsp olive/avocado/sunflower oil
1 kg potatoes (white or red), peeled
1 kg ripe tomatoes
1 tsp seasalt or to taste
500g Passata
300ml hot water
Optional - any dried herbs or chillies you wish to add for more flavour
🔥Pre-heat oven gas 9/220C - highest temperature!
🍔Add oil in tray & make 12 burger patties. Lay them out in tray.
🥔Slice potatoes into 2-3cm thick slices. Wash starch out then scatter in tray. Add seasalt over potatoes.
🥫In jug, add Passata (alittle water in carton to rinse out) & top with hot water until 800ml. Mix well. You may add other optional ingredients if you wish. Pour tomato stock over potatoes.
🍅Slice tomatoes into 2-3cm thick slices then use as topping over meat & potatoes. Cover with foil & bake 45mins -1 hour until potatoes are cooked.
🕵️♀️Take tray out, remove foil & put back in oven for another 15-30mins. Helps to reduce stock & gives brown crispy edges. Once ready, allow to rest just 10 mins before serving. Nice with green salad & crusty/ pitta bread for the rich sauce. Enjoy!
