I made it, I was concerned about the sour cream though, so I skipped that step this first time. My first cheesecake EVER! I think it might be the best thing I ever made! I’m new with the Instant Pot. I have only made Eggs, corn on the cob, pork tenderloin and now cheesecake. Thank you for your videos, I couldn’t do it without step by step instructions like you show us. I’ve realized after all these years that I am a visual learner and I might be able to do this after all! 😍

I made this cheesecake last night, in my Ninja Foodi, 6.5 qt. in a 7 inch pan. Man It came out SO GREAT. You just couldn't believe it. Follow this recipe and you will have a great New York Cheese cake. Thanks Indigo Nili.

My husband and I made this over the weekend. I bought the 8 inch pan so I needed to double the ingredients. It turned out perfect. I did get a BURN code because the lid didn't seal tight and all the water steamed out. I was a little worried that it would be messed up after starting again but it was just fine. So yummy!!! Thank you!!!!!!

I discovered that you actually don't need the foil sling at all. The rack with handles that came with the Instant Pot works perfectly :)
My recipe said to wrap the parchment paper around the bottom of the pan. It did work well.

I love my Instant Pot and have made two different cheesecake recipes, both which turned out great. I used a 7" springform pan without the parchment paper on the bottom or sides. I cooked mine for 28 minutes and did the natural release for 10 minutes then a quick release to release the rest of the pressure.
I want to add that the 7" (or 6") is the perfect size for a few people or even a single person...

Nice video, the foil sling is totally unnecessary since you have the trivet with handles. I like the 35 minute time. I’ve tried tha 28 min and both times it wasn’t done in the middle.👍🏽

I am fairly new to this as you were then and I recall the worry about getting the cake to expel from the FatDaddio pan and then from the botton and parchment; but after making quite few cakes, no problem, no worry. It just comes out every time. I do use non sitick spray instead of butter so no residual to see. It is fun to make-up new recipes, esp Keto ones.

After first watching you make cheese cake 3 years ago. I made my first cheese cake. It is sitting cooling while I am out. I realized that I forgot to put the sour cream topping on when I took it out of the instant pot. I won’t be back home for awhile. I suppose it is too late to add it once the cheese cake has cooled? Also, it did crack on top. I thought I was careful to not over beat the eggs, but will be better next time.

💕 My IP is an 8 Quart, so I'll be using the smallest of a set of 3 springform pans that I picked up at Walmart years ago. It's 8.25" They still sell the sets. Good luck, everyone ! 💗👋🏼

Cheesecake has such a great texture when made correctly. Slathering it with that white goo is something I'll never understand. With that part skipped, I am going to have to get one in front of my official taste testers. Good video.

This was a fun video. I have made a keto cheesecake several times to try it out. It has no crust. But really, when I am making my own recipe, I have to make it in the oven. I usually need two 10 inch cheesecakes as I am cooking for family gatherings. It would take forever to make four in the instant pot. I might just try this recipe just for fun. I always thought it sounded delicious. Good job!
You can stack the pans and bake two at a time. Depends on the size of your IP. I've done 3-4" springform pans stand with success.
Perhaps the smaller pans would fit but I don't think my 7" pan would stack in my 6 quart. I do wish they had come out with the 8 quart before I bought my second 6 quart.

What is the purpose of the foil and paper towel on top? I didn't do either and my cheesecake still came out great. I did dab a little moisture off the sides and that was it.
To keep out extra liquid from the steam from getting into the food.

My question is....For Easter, I made a Key Lime cheesecake from a basic Twin Cities recipe and it was more like a cream cheese pie consistency. Everyone loved it due to its light and creamy texture. I would like to make a denser version. My question is do you play with the pressure cook time to get it denser?
Try not covering it in the refrigerator . I made 2 before without covering. My last one I needed refrigerator stacking my miniatures, so I covered it and I think the heat condensation made it much softer than the first 2.
Also, using bottled juice does not set up as well as fresh squeezed juice.
Have a large glass of water on hand and dip the knife before each cut. Makes slicing much cleaner. :)
For this, the lactose intolerant can take their enzymes and deal... I will ;)

I've made this recipe b4 in my 7" Wilton springform. It was amazing. I thought you couldn't use whipped cream cheese because it is whipped with air and you need more fat. I normally use blocks of cream cheese for cheesecake. Good to know you can use the whipped cream cheese because we always have a tub from Costco in the refrigerator.
Risa Golding. I may be mistaken, but I believe Nili is using REGULAR cream cheese instead of whipped cream cheese which was sold in a tub instead of a block.

I have used my instant pot only for stews & soups. I have never made any desserts in it. Do I need to use a separate rubber ring? Just wandering if this will have an aftertaste from savory dishes.
I have had my instant pots (yes potS) forever and have never made a cheesecake either. Gonna give it a go with some artificial sweetener and no crust for keto.

kathy, i have a wonderful keto recipe with an almond flour crust. made it for a xmas party this year and bou was it a hit. I didn't do it in my instant pot because I wanted a 10 inch because of the people being served. If you are interested I would be happy to give you the recipe.
Please, What do you use for sugar replacement? Would Stevia taste good or does it have a biter sweet secondary taste? I am new to Keto and have made no desserts yet.

@@bellavita2005Erythritol is wonderful- it's a 1:1 ratio with sugar. Don't use the granulated kind, it doesn't dissolve like sugar. I have Swerve confectioner's sweetener and I'm planning to use it in cheesecake and creme brûlée.

Yes, as long as the bottom of the basket lets the cake stay flat. Even if you don't mind a lopsided cheesecake the areas where it is thicker might cook differently. I've seen pot-in-pot cooking for other cakes in metal mesh baskets and silicone racks with handles as well as metal racks. Other people put an aluminum paper sling under it for easier lifting.
As far as I know cooking time depends on ingredients and volume of food, not volume occupied by a basket vs. a rack. At least with the pressure cook mode.
Can I use 7" baking tray? I know it still fits. How much of ingredients I should add on for 7" baking tray?

I have the instant pot lux mini, can I still make this cheesecake in mine? Mine looks so small , but there are only two of us so I chose to get the smallest one.
You should be able to, as long as both your rack and your pan fit inside without sticking out of the inner pot.

I made this cheesecake tonight. The sour cream & sugar topping is "sour". It needs way more sugar, or just leave off the topping all together.
The printed recipes says 38 minutes, not 35, but yours looks perfect, guess it doesn’t matter!
I think the recipe creator changed it after I made this video... But yes, it was perfect! 😄

I've never made cheesecake. Is sour cream a normal topping ? Are there other alternatives?
Yes, it's pretty common on new york style cheesecake. You can leave it off and it'll still be great!

I made this cheesecake following your directions except I used a stand mixer & a 8qrt instant pot. It turned out great except I had to return it to the pot for an additional 5 minuets ( according to thisoldgals notes) because the center was still a little wet. Do you think the larger instant pot was the reason I needed to add more cooking time? Btw thank you for your videos... I’ve made several dishes copying you & all have been outstanding.

This is my first time, I have a 6 1/2 quart instant pot & a 7 inch pan....
When I make my cheesecake in the oven, it goes back in the oven to cook the sour cream topping. Haven't seen you or anyone put it back in the instant pot to cook the topping. Do you have any comment about this.
It's not necessary and tastes great without cooking a second time 😃
