Ingredients Crust ½ cup almond flour 1 teaspoon freshly grated lemon zest 2 tablespoon powdered Swerve Sweetener ⅛ teaspoon salt 1 ½ tablespoon butter melted Cheesecake Filling 1 lb cream cheese well softened ⅔ cup powdered Swerve Sweetener (more if you like it sweeter) 1 teaspoon freshly grated lemon zest ¼ cup fresh lemon juice 1 teaspoon lemon extract 1 large egg room temperature 2 large egg yolks room temperature 2 tablespoon heavy whipping cream Garnish ⅓ cup heavy whipping cream 1 tablespoon powdered Swerve Sweetener Lemon zest or lemon slices Instructions Crust Line the bottom of the springform pan with a circle of parchment paper cut to fit. Grease the paper and the sides of the pan. In a medium bowl, whisk together the almond flour, lemon zest, sweetener, and salt. Stir in the melted butter until the mixture begins to clump together. Press firmly and evenly into the bottom of the prepared pan and set aside.
My spouse is getting on board with keto. I baked your birthday cake last weekend and we both would eat a slice after dinner. I just love this cake. I have made it so many times. So moist. My spouse has to checks her blood sugar every morning and has been totally happy that it is normal. YaY. This weekend I will make her this yummy cheese cake. Thanks

OMG!!!! IT WORKED.!!! I can believe it. it is almost impossible to cook American recipes with european ingredients. I was not hopeful as the creamchees here turns runny when you mix it, and my filling was like thinck milk not the glorious thick batter you had made. 35 min in my instant pot, it had a very unhealthy wobble. ok another 18 min and bingo its cooked. 24hrs later its taste test tie and its heaven on a plate. Finally something real on keto. Hot dang you made my life.
I just made it this morning. The batter tastes terrific! Good tip about the paper towel on top to absorb more moisture. Definitely a dessert I will make often.

This looks so yummy! Have a question about running a sharp metal knife around the edge of a non-stick pan--doesn't it scratch the finish and ruin it? I know I've done that with other non-stick baking pans. Is there a "trick?" Thanks for all your great recipes and videos!
It's a risk, but it's necessary to get cheesecake out properly. And if you keep the knife hard against the wall of the pan, it's just running along it, shouldn't do too much damage.
Hi! My crust became very soggy and more liquid/water was coming out as it chilled in the fridge. I just don't understand, I covered the cake in tinfoil with the papertowel but still :(
Water clearly still got into the bottom. Make sure the foil covers the bottom and top completely, and really press it around the bottom of the pan to seal the seam.

The written, recipes, have a metric conversion button. If it’s not there, let me know, because some didn’t work properly. But it’s an easy fix.

Actually, I recommend cutting the filling down by 25%. For the eggs, use 1 egg and 1 egg yolk.

I think that depends on you and how much you can consume, how much activity you get, etc. I did add freezing instructions in the actual blog post!

Can I use a 4 inch springform instead to make a couple minis?
You need to find the area of two of your 4-inch pans vs. the area of the 7-inch pan. Then you can figure out how to adjust.
