    Flo Lum's Lemon Cheesecake with Shortbread Crust
    Shortbread Crust
    Cream together:
    1/2 cup butter, room temperature
    1/4 cup sugar
    Scrape sides
    Add:
    1 cup flour
    mix until crumbly
    Press into 7 in springform pan, refrigerate for 10 minutes, then bake in oven for 15 minutes at 400 degrees. Let Cool completely before adding cheesecake filling.
    Cheesecake Filling
    (only beat in mixer each additional ingredient for 30 seconds, scraping sides before adding next ingredient.)
    1 pkg cream cheese, 8oz, room temperature
    1/2 c sugar, add in a steady stream as mixer mixes
    1 cup sour cream, half at a time
    1 egg
    zest of 1 lemon
    2 tbsp lemon juice
    1 tsp vanilla
    Tip: make foil slings for trivet for easy removal of cheesecake after cooking
    put 1 cup water into Pressure cooker for cooking
    Pour Cheesecake batter into cooled crust. Tap pan to remove any air bubbles. Cover with foil or a silicone lid.
    Manual : 25 minutes- quick release, additional 20 minutes It should be mostly set, with only the center jiggly. Let set in the fridge overnight or for at least 4 hours.

    I've made this 3 times already. It is really the best cheese cake recipe. The texture of the cheesecake is very creamy and smooth without being overly dense.

    I just made the double chocolate cheese cake from the Instant Pot web site. One thing I liked about your video is when you took it out the first time it seemed under done. Exactly what happened to me, I went another 12 minutes and it seemed okay. It was reassuring to me that someone with your experience has the same issues and uses your judgement. I have only been using my IP Ultra 60 for a week. Glad you make these videos to help all of us get started!

    Flo, now that I have my Instant Pot my husband has had me make your cheesecake more than we should, but oh how delicious it is! I've been making my own cream cheese with greek yogurt so it has been especially creamy. Thanks so much for sharing.

    Magnificent cheesecake. I'm keeping this under my showstopper recipe file. I finally made it yesterday and sliced into this afternoon. Prepared it in a 8" springform and it was perfect. I appreciate your simple recipe. The flavors are lovely. The crust goes great with the filling--so creamy and luscious. My husband had 2 slices and my toddler enjoyed a mini slice. She said "mmm yum" with saucer eyes! Thank you, Flo!!!

    Thank you for showing the part where you had to cook it some more. This helps the rest of us to know that sometimes a recipe may take a little longer to cook. That looked really delicious and it being a small cheesecake is a better option for those of us who have to do portion control on rich desserts (that's me!!).

    The pours inside the fruit open up more at room temp allowing a higher juice yeild

    hi Flo, loved your video. must try your method of slings and use my silicone lid in the IP. I don't do an quick release for the cheesecake but a 10 min nr and find it sets nicely. my timing is also 35 min. BUT THE CREAMINESS EVER.

      I've made cheesecake in the pc for many years and it's always been 35 minutes with a natural release. I usually nr for at least 20 minutes and it's perfect every single time

    The reason for short mixing times is that beating too long will cause too much incorporation of air. Too much air in mixture will cause the batter to puff up too much in the oven (or pot). Then, when the cake is removed, the puffiness of this heavy batter collapses, making e cake either fall or develop a crack.

    Popping your lemon, lime, orange, or grapefruit in the microwave for 15-30 seconds will make it even easier to juice. the warmer in liquids inside, the weaker the walls of each "juice pod" are, the more juice comes out.

    what size IP do you typically use? I was very excited to see this recipe and the ribs. It looked like you had a ton of ribs, so I just want to make sure I get a big enough size like yours. Love your videos! Thanks for your help!

      +S Garrison Thanks so much! I have the 6 qt models. They came out with a bigger one recently, 8 qt, but usually the 6 qt works just fine. A bigger one could mean a bigger cheesecake though. 😉

      Instant Pot has an app for the Smart model. That's what I am referring to but you can just press the manual buttons to get the right time.

    You said the difference from how you cooked it last time was the green lid, then wondered why it took longer to cook. I think it was the lid. Maybe less sealed aluminum foil would be less problematic?

      +Taniesa Vlasak I would assume they work very similar but I am not familiar with the Cuisinart pressure cooker. I guess it depends on the psi. I know stove top pressure cookers work at a higher psi so will take less time than an electric one. Hope that's helpful.

      +Gloria Hayes I'm an iPhone user so I don't know for sure. The app is called Smart Cooker. I don't yet have the cheesecake script ready. I just haven't found the time. Most of my other recipes can be found on my blog: flolum.com. At the bottom of my recipes, there is download link. Once you touch the link or the IP icon, your phone should give you the option to open it in the Smart Cooker app. Hope that helps for now.

    How could you incorporate white chocolate into the cheesecake? would it make it denser?

      I used to make this exact same recipe in the oven. I assume you should be able to use your own recipe to cook in the IP.

    manually set what? I do not have same instant pot. Is it manually set to steam or pressure cook or what? I am new at this? Can anyone answer me on this as I do not see it on the recipe.?

    Where can I get the silicone cover for pot in pot cheesecakes? I checked amazon but can only find microwave ones. Help! I love this recipe but foil isn't working right.

    What is the weight of the cream cheese block as we do not have that size in the UK

      +Matt Emulsion Hi Matt, the cream cheese is 250 grams. The sour cream is 250ml and if you don't have sour cream, crème fraîche is the closest. Happy cheesecake making!

      +Meagan Rempel A friend got it for me from a cookware specialty store. Not sure where. Personally I had looked everywhere in town for one. I wanted a push pan but no luck. Then I heard Michaels had them but when I went they were all gone. You'll need a 7" x 3".
