The Food of Rome | A Day in the Eternal City with Harper's Dad!
When Eva and I went to Italy this past winter, we were able to briefly visit our favorite city in the world: Rome. While we were there, we recorded this video with my dad, Max, but couldn't release it due to Max's prohibitive TV contract with MasterChef Italia.
Now we can finally show you our culinary tour through the Eternal City! We hope you enjoy it!

Yeah! I was watching it on cable when I was there earlier this month. I didn't realize when I was watching it that he was your dad Harper!!
Max even says _'nnamo_ the way only a local Roman resident would.

Seeing Italy through the eyes of foreigners makes you understand many things. Carbonara, carcifi alla romana and alla giudia, porchetta di Ariccia, Sant'Eustacchio coffee ... I have eaten them almost always and too often I forget that for others people they are not normal food but are an exception.

Being a levantine I have been a stranger in every place I have been. In Rome people made me feel at home - Rome is special. This happened in 1969, I travelled 25 years so "home" is every where but when I get back to Rome I feel the difference. La ciriola con la porchetta, pizza e fichi, prosciutto con melone - ah ah, its non only the food, its the company.

I think Eva should visit an “Italian” market in America, there are a few I’ve been to as an AZ native. I would just like to hear her take on these places and if they remind her of home at all. There is Roma Imports in Tucson, DeFalcos deli and grocer closer to Phoenix. But I’m sure there are a few others you could find.
That might be unfair to the deli.
Roma Imports is a deli too, just isn’t in the name. They both have a fairly good grocery selection.

Di Palo's on 200 Grand St. in NYC has been there for over 125 years. Family-run for 4 generations. They still speak Italiano as well as perfect English - everything is either made fresh there or imported from Italy.
@@cjay2 That might be too authentic. I feel like a more questionable one would test Eva’s boundaries comparing it to Calabria, but the best ones will be on the coasts, they have some great shops I have loved visiting there. There is also some good ones on India St San Diego, they haven’t been around as long than in NY but great stuff and great people.
Am I the only one that didn’t know Harper’s dad is a television/famous chef?? I want more details about that!

Nope, I just found out too.
PSA: Even though it's hard to find guanciale here in NC in the USA, it's easy to find pig cheeks (hog jowls to us Southerners)! I just go to the pork outlet at my local farmer's market, and they're happy to order them for me. There are recipes online for turning them into guanciale, if you're the homesteader type with time on your hands, or you can just use them straight up - not the same as proper aging and seasoning, but a good second if you don't have access to the real thing.

Love, love, love this episode. You combined the two things that I love to do when I travel, research the local food culture and customs and delve a little bit more into the history of a place. I really appreciated the portion where Harper pointed out where Julius Caesar was assassinated and where Papa Max pointed out the brass(?) markers embedded in the street in the Jewish Quarter on your way to enjoying excellent local cuisine. Awesome video! when I was in Rome I went on a truffle hunt with dogs just north of Rome an hour. At the end of the day our guide's mom cooked up 10 different truffle dishes with the fresh truffles we found. It was a religious experience I will never forget!!!!!! Can Eva do some truffle recipes please?

Fun fact: in Rome there’s a place called “Biblioteca Casanatense” and it’s an important place that contains lots of documents and sheet music of differenti Italian composers including Nicolò Paganini’s manuscripts.

I would totally be Harper if I was in Rome or rather when I would be in Rome. I love history too much to not mention who died where and why it matters.

Carbonara is absolutely my favorite Italian pasta -- Food of the Gods. Most Italian restaurants in the U.S. serve a travesty of it with cream and peas included, or even chicken. NO! Not long ago, I finally attempted it after watching videos with authentic recipes. You need to be careful to keep the eggs creamy instead of congealed, but it worked -- sheer Heaven. I went out of my way and was able to find guanciale, expensive but oh so good.
LOL, I didn't know anything about this channel, but was very happy to watch again Maxwel, the nicest gentleman who ever partecipated to Masterchef Italy, and an excellent chef too. During the show he also received warm congratulations from Iginio Massari (probably one of the most famous pastry chefs in the world).
One of our favorite videos! Went to Rome 2009. Hoping to go back, and check out these places for food. The porchetta sandwich reminded me of my childhood. Cold pork sandwiches in our school lunches back in the 60s. Just sent homemade biscotti to the grandchildren. Keep Italian heritage going😊Grazie!!

I took my daughter to Rome for her high school graduation present. While there we had dinner at Betto e Mary where we tried traditional Roman cuisine called Quinto Quarto (“fifth quarter”) which is the offal of all kinds of animals including horse. They had both kinds of the artichokes there too. We were the only ones there who spoke English. Thank goodness for Google Translate. We asked them to surprise us with whatever they suggested we eat. A group of elderly men were all partying there and by the end of the night we were all singing together. What a wonderful dinner and a memorable time.
Harper your dad looks amazing love his white pants he looks soo cool italian way great match. Harper you and Eva .made my husband from Tennessee to see you every evening . I am italian as well my dad is Italian and yes roots from calabria, Castrovillari. Just do you know my husband loooove your videos and finally learning because, guess what he Always thought I was crazy the way I Cook my calabrese way. Now for good he sees and knows what I was trying to explain for years!. Love you guys.
Nice family in Rome. I am Calabrese too. My parents came from CHIARAVALLE CENTRALE PROVINCI CATANZARO. I still have family there. I need to save money and go and see them.

Harper, I am Italian, I visited Rome many times in my life but I never knew where Julius Caesar was assassinated... You make me feel ashamed of myself!!!! 😟
You have to follow his path. From the suburbia, where he lived, to Largo Argentina, where he was killed. Then follow the Teatro di Pompeo hidden places. It doesn't exist anymore but palaces are built following its structures and there are two restaurants built inside his ruins. It' very fascinating.

One of the things that really surprised me when I first visited Rome was the lack of documentation on the archeological sites. In the US, there would be a giant plaque saying "Julius Caesar was assassinated here." I suppose it's hard in a city where every brick has a story to tell!

You have to come to the south. I see pig cheeks and cow cheeks all the time in the stores. The smaller stores, not places like Walmart grocery, places like the local Piggly Wiggly, will have them.
You can buy them at walmart all day long
I bought a smoked pig cheek at a specialty butcher a few years back not knowing what it was. I'm thinking regular bacon, but when I fried it up and was left with "nothing" as they are mostly fat (which is the point, for making dishes like this carbonara,) I was left scratching my head. Now I know better.
Because they are called Hog Jowls in America.

In US we have hog jowls (southern), used as bacon, and hog maul (head cheese)., PA.

Rome, ah beautiful Rome. I was there in 2004, I camped in my VW van outside of the city and had my little 150cc Honda scooter with me. I asked a lady on a scooter next to me at the traffic light where Vatican City was and she gave me a crash course in Italian scooter riding when she told me to follow her. This is what running with the bulls in Pamplona must be like...

Eva, Harper, and Papa Max...you have me watering at the mouth, especially for the carciofo. I shouldn't be because I am currently at 7:30am EST sous vide cooking a four bone standing rib roast. While that will be amazing later for dinner, I am so sad I am not in Italia right now!

I am beyond jealous. First, I'm your Dad's age. I went to med school in Italy for 7 years, lived in Rome for 6 months, and now consider myself a converted Italian. It took years to go from hating Italy and everything Italian to becoming a convert. My dad never took me to Italy, but we made damn sure our kids got to go, repeatedly, and let me tell you, as your American accented Dad can, once Italy gets under your skin, it never leaves. A few points, it's nice to hear "annamo" again. Next coffee at St Eustachio, meh! It's good coffee, don't misunderstand me, and if your near Navonna, sure. But not worth going out of your way for. Guanciale. It's available everywhere in Italy NOW, but in the 1970s, NO WAY! When we lived in Padova up north, we had the best amatriciana from anywhere in the country (including Rome), and when we asked for the recipe, my wife and I were both told, it's made with guanciale "...but you cannot buy it here..." It took years of making pancetta at home before I tried guanciale. My pancetta is amazing, the guanciale, well, not so much. My pancetta is a great substitute. And of course not, American bacon is NOT panchetta or guanciale. The porchetta. Jewish boy that I am from Long Island, I don't go out of my way to eat pork. My kids love porchetta, they make it themselves, and while they do a fantastic job, it isn't Roman porchetta. Don't aske me why. Not how you could eat that dry sandwich without a glass of red wine is beyond me. One of my favorite porchetta moments was in a little bar on the "square" in Siena. Great sandwich, amazing sangiovese in a plastic glass. Heaven. The artichokes. East is east and west is west. Sadly. You rarely find the baby artichokes here in the states, and I've never seen the purple ones. Dad left out the mint in his carciofi alla romana. Pardonable. The Giudia, as we were told at your restaurant, a) can't make them at home, and B) they are double fried. Once at about 300F, removed, drained, cooled, then at a higher temp until crisp. They have to be cleaned, squashed down to open them up, into the oil, out of the oil, back into hotter oil. Much easier going to Rome. All in all, you brought back wonderful memories. I had always wanted to buy a small apartment in Venice, but life got in the way. Your Dad got to move to Italy, dresses like an Italian, sports a hint of Roman dialect, and has a very strong American accent. I love it! Wonderful video, thank you so much, and warmest regards from suburban Atlanta Georgia. (Oh, did you know that the area around Termini Station was the ORIGINAL "suburb/suburba" of ancient Rome? Julius Caesar and Mom used to live just a block or two away, before he moved uptown (and got killed downtown). It's an amazing city, and as I said, as you seem to realize, once it gets under your skin, it's there forever. Auguri, tutti!

Never met an artichoke I didn't love. Growing up, driving back to So Cal from visiting family in San Francisco, we always stopped at a certain farm to buy them. They were a nickel, dime or quarter each depending on size (yeah, I'm old). We just steamed them whole, dipped the leaves in mayonnaise and scraped off the yumminess with our teeth. Soooo good!

Wow, here in Rome we cook them in a similar way, but instead of steaming them we cook them directly on the embers, and with chopped parsley in the mayonnaise. :D
We throw away the first burnt leaves, and eat them in the same way.
Thank you for bringing me back to my city. I live in Australia now and it was great to see all of my favourite Roman monuments. Also, Sant'Eustachio and Roscioli are two authentic and proper Roman places, great choice guys!

Right! They come out every Sunday spot on 7 am ET. And all their videos make you want to "change your breakfast habit" as it were. Me, personally, will eat anything for breakfast, so I could eat whatever specialty the PastaDue are making.

When we (near Rome) make artichokes 'alle romana', we use mint (mentuccia) instead of parsley.
Do you cut out the bitter part inside?
@@rosacortes5074 - They use an artichoke known as "romanesco", which is a globe artichoke without spikes and no "beard" in the central leaves.
@@rosacortes5074 If romanesco aren’t available where you live, you can use a regular artichoke and just cut it in half to clean out the spikes... takes a wee bit of practice but it’s not difficult.

I love Rome! One of my favorite cities ever! If you like it, you should visit Verona the next time, every Roman friend I have says that Verona is like a mini Rome… and we have pretty good dishes too! (Btw, I can’t wait for artichoke season to be back, I love them!)
