Yeah, I tried another version of this in my crockpot, and it didn’t taste that great. In fact, it wasn’t even close to what I remember as true peach cobbler . I’m from the south, and my grandmother, my Dad’s mother, was an excellent, excellent cook, and in no way did whatever I ate taste like that. I remember. Obviously I haven’t tried your method yet, but I’m just going to stick with what I know and that would be stew, chicken, pork butt and even that stuff in a crockpot is not quite the same as an oven. Sorry.
