I just started watching some of Chef Paek's content thanks to Kim Seokjin and I love him! I will definitely be giving this a try! If it can impress Chef Paek, then it must be awesome!
not at all. You can entirely skip the garlic roasting step and just simmer it along with the ramen after using a garlic crusher. Roasted garlic is too subtle of a flavour in something like shin ramen so the process of simmering it to remove the pungency ends up being indistinguishable to roasting it

Try using bone broth instead of just water. Kicks it TF up a notch in the BEST way.
