I brew at every temperature, but for the Summer I like brewing hot and pouring over ice. To do that, I brew like I normally would for gongfu style and just use a lot of ice. It's wickedly refreshing.

lol im the opposite, particularly if im drinking a really good tea that makes my mouth water to think about, im always so excited to drink jt after taking the time to mindfully brew it that i end up drinking it too fast (and have certainly gotten burned a few times for my impatience)… ill go through 10 steeps in 15 minutes sometimes lmao
I live in a rural area where sometimes during the year when we have a lot of rain the runoff from the pastures can pollute our local ground water with e-coli, luckily even the lowest tea temp i brew at (75c for green) is hot enough to kill the baddies :D
I like tea served hot too, even if the weather is 30 or so degrees (Celsius if Americans need clarification) and the balmy weather causes great suffering. It just feels wrong to drink tea chilled or iced, and more so the bottled ones as they are just too sweet.
like southern sweat tea? pretty sure that tea is mostly sun tea with low quality leaves (sugar offsets bitterness which is the complete opposite point of Chinese tea) and then you just heat it up in order to dissolve enough sugar that you can make rock candy with it XD
If they're loose leaf, they probably can be done gongfu style. If it's Japanese matcha where it's ground powder, probably not. However, if you like preparing other teas in the gongfu style and it's enjoyable to you and to those you serve it to, by all means do so. None of this would be traditional, but go for it.
indian teas if loose leaf can be done in a similar manner, for spiced/herbal teas they typically require boiling water for long times to extract the spices/oils from the other bits (some would argue these are not true 'tea' though)

I'm hot tea 100% if it's 109F outside I will still drink it. I have sensitive teeth though, so the cold beverages are really hard for me to drink.

So cold tea uses energy to digest. Therefore burns more calories….so cold tea is diet
Except cold liquids and foods are harder to digest and slow your metabolism and sets you back in the long run.
