Empanada Dough
1 1/2 cups Masarepa (corn flour)
1 teaspoon Kosher salt
1 teaspoon Loisa Sazon (link below)
2 cups water
1 tablespoon oil
Empanada Filling
1 LB ground beef, cooked and drained
1/3 cup red bell pepper, diced
2 plum tomatoes, diced
1/2 cup yellow onion, diced
1 tablespoon garlic, minced
1 tablespoon Sofrito
1/2 teaspoon Kosher salt or Adobo
1 teaspoon Sazon
1/2 teaspoon ground cumin
2 russet potatoes, diced (cooked and lightly mashed)
2 tablespoons chopped cilantro
2 tablespoons chopped scallions
Aji Picante Salsa
1 Roma tomato, diced
1 Jalapeno, seeded and diced
1/4 cup cilantro, chopped
1/4 cup parsley. chopped
2 scallions, chopped
Juice of 1 lime
1 tablespoon white vinegar
1 tablespoon olive oil
1 teaspoon Kosher salt
1/4 teaspoon black pepper
1/4 cup water

Great Video. However your adding steps that are unnecessary. once you've pressed it, remove the top layer of ziplok, and cup the bottom one in your palm, you can fill it, while holding the dough, then fold the plastic over, to get a basic seal. Place this folded empanada down and use a bowl or large cup to press down and seal, over top of the plastic. This will seal the empanada, and give you a nice cleanly cut edge. You will rarely see a Colombian hand sealing the edges with corn based empanadas, in the manner your showing, that is predominantly used for flour based empanadas. Your method, works; however if your making more than a handful of empanadas, you will be working all day. Cheers! Disfruta!
