    毛姐粟米濃雞湯 (不含奶類,適合奶類敏感人士 😌)
    食材:
    1. 新鮮有機粟米 4條
    2. 無激素冰鮮雞 1隻身
    3. 水 2.5公升
    方法 ​:
    自製濃雞湯:
    ● 雞切成小塊
    ● 鍋內凍水加入雞件
    ● 開火 "出水"
    ● 將平底鍋裝滿2.5升水
    ● 將沖洗過的雞肉放入鍋中煮沸
    ● 收細火煮至雞湯減少1/3,約 1 1⁄2 小時
    ● 倒出雞湯放在一邊
    ● 中火炒雞塊直到肉和骨頭分離,取出骨頭
    ● 雞湯倒回鍋中
    ● 連同雞肉,蓋上鍋煮沸5分鐘
    ● 用不銹鋼篩過濾濃湯
    新鮮粟米粒:
    ● 將所有粟米蒸30分鐘
    ● 用刀將粟米粒切出
    粟米濃雞湯做法
    ● 3⁄4粟米粒 + 2⁄3公升濃雞湯倒入攪拌機
    ● 用高速打成糊狀
    ● 用細濾網過濾粟米湯
    ● 倒入鍋中
    ● 加入其餘的1⁄4粟米粒
    ● 大火煮滾
    ● 用鹽和胡椒粉調味
    Mo's Corn Potage (Sweet Corn & Chicken Soup, Dairy-Free for Lactose Intolerant 😌)
    Ingredients:
    1. Fresh organic corn 4pc
    2. No hormones chilled whole chicken
    3. Water 2.5 litre
    Method:
    Homemade Chicken Broth:
    ● Chop the chicken into pieces
    ● Blanch the chopped chicken
    ● Rinse the blanched chicken pcs with running water
    ● Fill the pan with 2.5 litre water and set on high heat
    ● Put the rinsed chicken pcs into the pan
    ● Bring to boil
    ● Simmer over low heat until liquid has reduced by 1⁄3, about 1 1⁄2 hours
    ● Pour out the chicken broth and set aside
    ● Pan-fry the chicken pcs until meat and bones are separated
    ● Remove the bones and pour the chicken broth back into the pan
    ● Cover the pan and bring to boil for 5 mins
    ● Strain the broth
    Fresh Corn:
    ● Steam all the corn for 30mins
    ● Remove the corn kernels from the cobs
    Corn Potage
    ● 3⁄4 corn kernels + 2⁄3 litre chicken soup into the mixer
    ● Blend them well at high speed
    ● Strain the corn soup with a fine strainer
    ● Add the rest of the 1⁄4corn kernels into the corn soup
    ● Bring to boil
    ● Season with salt & pepper
