This is great! I try to do a meatless day once a week for us and don’t always have ideas outside of cheese pizza, mac and cheese, or cheese pizza. I might need to get this cookbook! I’m finding cooking stuff very comforting during this time.
Great recipes. I adore spring rolls and do them freestyle with lots of variations including proteins, mango, egg omelet rolled and cut in strips, lettuces, carrots, cucumber and lots of herbs including cilantro, mint and basil. For easy dipping sauce, I do peanut butter, hoisin, sriracha, soy and warm water. Addictive. I will try this version as well.

when shredding carrots with a box grater, I cut them in thirds, cut one thin slice off one side and then grate from the cut side. Makes longer gratings and is easier to grate then trying to grate the whole carrot. It has a flat side which makes it much easier to grate.
Loved your video. I make bread weekly. a hint I received from a friend is to add enough flour til it pulls away from the bowl clean. if it is still sticking, just add a T. At a time.
LOVE the vegetarian meal ideas 💕 also I wanted to share a tip: pancakes reheat amazingly well in the toaster! As long as you are mindful of the size, you can freeze them and pop them in the toaster on a medium/low heat setting and they come out great

I bought the ATK Vegetarian cookbook on Oct 31, 2015, or so says Amazon, lol. It is a great book and, like you, I have always been pleased with all the ATK/Cook's Country books. Your large fork looks very useful, so much so, it makes you wonder why it hasn't been around for years.
Another great tip is to cut the manicotti noodles in half once they cool. Then they are easier to fill and make smaller portions for children and of course grand children! My mom is 87 and likes one and a half too! All recipes are helpful and great as usual!
I love doing lots of pancakes and putting them in the freezer for later. I will often do 15-20 each of chocolate chip and blueberry and freeze them in stacks of two because that's how many my kids usually eat. Any more than that and I use the wax paper in between too.
I used the yogurt setting on my Instant Pot to proof some dough the other day for 15 minutes. It was my first time trying it that way and it worked great. Manicotti is one of my son's favorites...but it never fails that the tubes tear when I'm filling them. So we started using jumbo shells stuffed with the manicotti filling. So much easier. :) I am definitely going to try the granola!
Great meal ideas! I have a daughter whom loves granola and my other daughter loves spring rolls so I will be trying both of these recipes. Great job helping mom in the kitchen Connor. I bought a pan you recommend and I have been cooking so much with this pan. but I was today years old when I saw that the oven we had for 6 years has the same bread proof you do. We cook constantly. I always noticed we had the same oven but not until today did I ever realize there was a bread proof button. You are incredible
Catching up on your videos!! I don't boil lasagna noodles. I put them in a shallow cake pan like an 8x8. Then i put HOT water over and let it soak while I prepare the ricotta cheese mixture.

We are tying to be more healthy and eat Vegan. I am super excited about these recipes! I think using a flax egg and plant milk I can make most of the recipes. I am most excited about the spring rolls! Because, I have had the wrappers in my pantry for a couple of months but have been too intimidated to try them. Use a chip clip on the ziplock at the top of the filling when you're piping. It will keep the filling at the bottom of the bag and help keep the pressure.

If Connor has a sweet tooth and likes pancakes then have you tried, 2 whisks egg together with 2 mashed bananas and a cup of coconut flour. They are sweet but no fat just healthy natural ingredients. Your video was lovely to see ❤️
Great recipes! I love watching your meal prep videos. I noticed you used active yeast versus bread machine or instant. You might need to activate the yeast before mixing in flour. The instant or bread machine you do not activate before hand. To activate you mix in warm water or milk wit sugar or honey for about 5 minutes. If it bubbles it is good.
Great meal prep Jen. When I am done watching your video I am going to finally order my salad spinner from Target. I think I told you about the delivery problems I have had with Amazon so I rarely order from them. I did a grocery delivery from my local grocery store and my order will be delivered tomorrow. I ordered a lot of produce so I will really get a lot of use out of the salad spinner all during the a Summer. Love your channel.

I love Cooks Country and I make their American Sandwich Bread and I have modified it for the bread machine. My measurements are a little different but it is totally my favorite bread!! I make it at least once a week. Totally addicted to Christine at Frugal Fit Mom's granola. Super tasty with coconut if you want to try something different ;)
Thank you Jen for mentioning that Conor was left handed. Many things in the world are made for right handed people and no one ever realizes it until you’re using your left hand. I am the only left handed person in my very large extended family and I am very proud of it.
We love those spring rolls with shrimp. (My 11 year old will eat anything with shrimp in it). He likes the dipping sauce too (ours is a variation of the recipe you have here).

Girl this was my face when you were kneading at speed 4 --> 😳😱🤯 LOL Speed 2 is the highest you should go with the dough hook. Love twice baked potatoes. I like to add green onion and last few minutes black olives. And yes broccoli on potatoes is 👍🏻👍🏻👍🏻👍🏻👍🏻

Jen an easy way to stuff your manicotti next time. I boil my noodles and cut them open with a scissors fill roll and place seam side down!

Martha Stewart’s homemade granola is really good too. The only sweetener is honey....no extra sugar.
