I love matcha latte so much, but people tend to use the lower-quality stuff unfortunately and it makes them think like it's overly bitter and not tasty - that's why when I try to convert a friend to matcha I make them the ceremonial grade.
If you decide to release such a video, maybe you should slide in a quote from yourself as well. "Maybe it's the love for detail - or maybe it is making impermanent things beautiful." Has such a depth to it and fits the mentality behind tea ceremony incredibly. Wow. Way to up your production. The double straining is a nice tip. Usually, for photos, I've learned to whisk the matcha less get better milk texture, but straining it again is probably better for actual drinking.
It will likely make the matcha aromatic and less bitter. The catechins are more heavily released when hot. That being said some of the flavors will certainly change.
Do you have any ideas on how to include this in workflow at a higher volume? I am opening a coffee cart and I'd like to make some banging matcha? Which steps of the process make the biggest difference in end quality? What parts do you think can be prepared in advance / in higher volumes?
