Super Fast Salmon Souffle

  • Delicious salmon soufflé in less than 45 minutes.
    Here are the ingredients:
    One 7 1/2 ounce can red sockeye salmon
    2 large eggs
    3 tablespoons self-rising flour
    1/4 cup chopped onion
    1/2 red bell pepper
    Juice of 1/2 lemon
    1 teaspoon dill weed
    1 teaspoon Old Bay Seasoning
    NO EXTRA SALT IS NEEDED FOR THIS RECIPE
    This is easily made in a food processor.
    Bake in a greased loaf pan at 350 degrees for 30-45 minutes
    Sauce:
    Whisk together
    2 tablespoon mayonnaise
    2 tablespoon ketchup
    1 tablespoon cooking sherry

    One question----If I make this souffle' with fresh salmon (not canned), should I cook the salmon first or use it uncooked? Thanks. I really like your recipes and appreciate your advice.

      I'm going to make those tomorrow because they freeze so well I'll be taking them to Mountain Rest next week. Cooking in the travel trailer leaves a lot to be desired because of the small space, so this time I'm taking a lot of frozen cooked meals that I can just warm and serve. Those biscuits are a cross between a regular biscuit and a yeast roll.

    Phyllis, do you think this could be frozen? I like to prepare meals in advance in small aluminum loaf pans and freeze. Thanks!

      I have never frozen this so I'm not sure how it would do.

      I would love for my Othalmologist to see your comment and mine. He says I don't need reading glasses because of my genes and I say it's because of a healthy life style. I still wear glasses to be able to read road signs from a distance but I don't need glasses to read small print. This past year when he got through with my yearly exam he said I should thank my God for such healthy eyes and again I said "God shows me how to eat healthy". He just smiled.

      Phyllis Stokes Isn't it amazing (or not, really) how when something bad happens people want to say "it's God," but when something is good they want to say "it's luck." People who ought to be giving credit to God seems to just become dumbstruck and smile when we give the Lord credit.
