When ready to eat add in
Sugar
MSG
Chili
Garlic
You can eat this with
Basils and eggplant or whatever vegetables your accustomed too.
I learned how to cook khmer food since I was eight years old growing up here. My mom taught me a lot but unfortunately she wasn't able to teach me this one. Most Khmers don't like to share their recipes but I am so thankful that your mom is showing young and little older ones like me how to make true khmer food. Keep them coming...please!

Thanks! Always enjoy different way of making Khmer pickle. This recipe is so similar how my mom make it! Only different is Ithink my mom put roasted rice in with shrimp and let it sit for a week. :)

this is awesome, great video. personally i like to have big chunks of papaya, but thats just the way my mom makes it! BUT you guys keep making these videos!!! when i am awayy from my family and need comfort food, ill know that genuine khmer food is just one click away!

Greens that goes good with it is Thai Basil and minced asian coriander. Best combo is shredded dry squad jerky. Squid jerky is also best with papaya salad too.

I saw a different way to make mam lahong by using this brine called Vietnamese Mam Ca Sac Xay , is that way just an alternative for this or is it different taste wise?

my mom mix the papaya in when the shrimp is completely fermented. I guess every mother have their own magic.
She said that she has a recipe for that. We'll get to it when we can.

The papaya you use is pale green. I live in the UK, and the papaya we have here has a thick green skin, and the pulp is orange with black seeds. Which type of papaya do you use? Could you substitute green mango?

The first round, after she salted the shrimps, did she it out or in the fridge? I know the second half is to leave it outside in room temp for a week or so. Please reply oun bros.
After you salt the shrimp you leave it outside of the fridge. Then wait 1-2 weeks and you add the papaya and the rest of the other ingredients. And you still keep it outside of the fridge. Once you are ready to eat it and it's sour the way you want it. Then you place it inside of the fridge since it no longer needs to ferment.

I never had plaa raa nor do I know how it smells like. But I'm sure it doesn't smell or taste the same.
I have half a video. We never got to showcase the results and by that time, we already ate all of the pa'awk lol. I'll have to wait till next time. Its on the list though!

I'm sure you can. I see no problem with that. The chili won't change the taste, it'll just make it spicy.

I have no idea. Just add sugar to it if you think it needs it when you are about to eat it.
the first process is only salt... then when it's ready to eat you can season it to whatever taste you like
