  • Part 1
    For shrimps
    2 lbs of small fresh shrimp
    1.5 to 2 Tbsp of sea salt
    Above need to marinade with salt and keep in the jar for 5 days at room temperature
    After 5 days
    4-5 Tbsp of of palm sugar syrup ( adjust your need)
    2 Tbsp of fresh ground galangal
    4 Tbsp of roasted rice powder ( adjust when needed)
    Need to fermented for 1-2 days depend on the weather
    Part 2
    For Papaya
    1/4 cup of palm sugar syrup
    1 good size Green papaya (shredded,slice, cut in anyway you like )
    Some carrot (optional)
    Ice water
    1/2 cup of slice ginger cut into strip
    Fresh ground galangal
    Roasted rice powder
    Sea salt
    All of the above is base on your own taste and preferences but make sure to watch the video for complete step to get the idea.

    I added every ingredients together with the shrimps I didn’t leave the shrimp out for 5 days it still tastes the same.

      If it’s taste the same and you like it then it’s cool.. the way we do fermented is how I did but if you find a better way and it work for you that’s awesome 🤩

    How do you make fermented papaya without the shrimp? Is it the same recipe?

      Sarom Ben a little different. If you have mam paste already made you use that to marinade the papaya and just add galangal and roasted rice powder. But before you add mam you need to put some salt onto the papaya.i have mam paste for sell in my website www.thearaspicykitchen.com

    Hi sister ! How can we know that the shrimps are ready to mix with papaya ?

      Hour Ly it should be ready because after you marinade galangal and roasted rice powder for couple days it should be sour and watery and the smell will be sour rotten smell. The most for warm place is about 3 days and it ready to be mix with papaya.

      Connie Wesley maybe you meant som pa? That marinade with cook sticky rice or jasmine rice but if she made this kind yes that’s fine with roasted sticky rice.

      Connie Wesley if you mean som pa lao or Thai food I can make. I just want to make sure this is what you want som pa shrimp and it ready in three days. We normally make it with fish. Let me know so I can put on my list to make it.

      I think it’s the same process as fermented fish. I like shrimps done that way because you can eat it right out of the jar once it’s fermented. I want to try to make it from memory but I’m afraid I miss some steps. I like both ways of fermented shrimps more then fish. Thank you.
